Cílem této práce je vypracovat podnikatelský plán na zahájení provozu nové kavárny. Vlastnímu plánovému dokumentu předchází teoretické vymezení pojmů podnikatel a podnikání, definování možných bariér vstupu do podnikání v České republice i v zahraničí, právních forem podnikání a určení specifik podnikatelské činnosti v pohostinství. Součástí práce je návrh možné podoby plánu, jehož pilíře tvoří analýza externího prostředí (pomocí PEST analýzy, Porterova modelu pěti konkurenčních sil aj.), marketingový plán a finanční plán. Samotný dokument "Podnikatelský plán: provozování podniku Kavárna XY, s.r.o." je pak vypracován na základě výše zmíněné teoretické předlohy.

The main aim of this Master's Thesis is to introduce a successful business plan with the unique concept of café, selling point and showroom that will be realistic, cost-effective and attractive for customers. The Thesis is divided into two main parts, the theoretical one and the practical one. The theoretical part includes basic information designed for aspiring enterpreneurs. In this part there are described fundamental concepts associated with doing business, Lean Canvas model as well as terms and structure of business plan. The practical part relies on the information contained in the theoretical part and represents the business plan of a company "Café at the Watchamker". In this part of the Thesis there are results of market research, competition analysis, customer characteristics, financial analysis, SWOT analysis and business risks analysis. In conclusion of this part there is evaluation of success and feasibility statement of the business plan.

Analysis is done by secondary research, when we establish evaluated criteria, by which we rate single cafe, which can be found by user in browser on top places. The main purpose of this thesis is to decide, if it's efficient to open cafe at Prague 11. The cafe Minima s. r. o., should be quiet and comfortable place for sitting down and enjoying fine products. The first part summarizes theory needed. At the second part will be stated what's the cafe orientation -- vision and mission - based on the public opinion polls. Next comes the exploration of surroundings with help of Porter and PEST analyses. At the end will be numeric formulation and calculation of possible profit and return of investment. The outcome of thesis is decision about opening or not opening the cafe.

The subject of this thesis is creation of business plan of café in České Budějovice. The thesis is divided into two parts -- theoretical and practical. The theoretical part is about basic terms, general description and structure of business concept. In practical part, there is written the complete business plan of Theatre café and wineroom. The practical part deals with specific business plan that verify the theoretical process in practise and shows that the project is viable and it has chance to be successful.

The work consists of research, including expert's and customer's views. The core research concerns the motivation of culinary schools students to study and work in this field. Practical examples are primarily focused on sales promotion, media relations and processes that should be followed in café industry. The conclusion summarizes the key findings of all research undertaken.
