Microbial contamination packaging glass
Bělohoubková, Tereza ; Vítová, Eva (referee) ; Veselá, Mária (advisor)
The bachelor thesis contemplates the formation of microbial contamination during production of glass packaging used in food industry. The theoretical part defines the word packaging, its function and legislation of glass packaging. Glass packaging production is described as well as arising risks of potential microbial contamination. Unacceptable microorganisms with ability to live on the surface of glass packaging and possible determination of the microorganisms are characterized in the thesis. In the practical part swabs of produced glass packaging were analyzed by ATP bioluminescence and pH of the inner glass surface was determined to assess species of microorganisms able to live on glass surface. Conclusion of the thesis discusses establishments to lower the risk of microbial contamination.
Disposable pH sensor
Dvořáčková, Sabina ; Kovalčík, Adriána (referee) ; Veselá, Mária (advisor)
This bachelor thesis deals with thin polymer layers containing substances capable of reacting to changes in the pH. In theory are processed informations of smart packaging including legislation of general food packaging. Natural substances forming the basis for the production of edible films are also described. An indicator of ammonia in composition of PVA and red cabbage anthocyanins was studied here. The prepared layers were tested for gaseous NH3. Layers containing anthocyanins responded with a very intense color transition from purple and blue to turquoise.
Characterization of blackthorn products
Červinková, Zuzana ; Veselá, Mária (referee) ; Kovalčík, Adriána (advisor)
This bachelor thesis deals with the preparation and the chemical characterization of ethanolic extracts and products from the blackthorn (Prunus spinosa L.) fruit. The theoretical part of the work contains the characterization of the blackthorn and describes the chemical composition of the fruit. Furthermore, the theoretical part states possible effects and possible uses of the Prunus spinosa L. fruit in the food industry, folk medicine and pharmacy. The experimental part describes the preparation of the extracts (40% ethanol) and the products (i.e., homemade sloe wine and homemade blackthorn liqueur). The content of reducing sugars, polyphenols and flavonoids was quantified in samples of wine, liqueur, juice and ethanol extracts. Furthermore, the antioxidant activity of individual samples was determined. Two spectrophotometric methods for the determination of reducing sugars were used and compared, namely the Somogyi-Nelson (SN) assay and the 3,5-dinitrosalicylic acid (DNS) assay. The DNS assay provided slightly overestimated results, while the results from the SN assay were closer to the actual content of reducing sugars. Polyphenols and flavonoids are substances that have antioxidant properties. A strong correlation was observed between antioxidant activity and the concentration of flavonoids.
Video Home Training and Its Possibilities in System of Families with Hearing Impaired Children
Holyanska, Marie ; Šírová, Eva (advisor) ; Veselá, Michaela (referee)
The aim of the master's thesis is in-depth exploration of possibilities of using the Video Home Training method within a family setting and with motivation to support the development of communication between the child with hearing impairment and his hearing parent. The first part of the thesis creates a background for this research, psychological aspects of the care for a deaf child are being described, along with the demands for mutual conversation, which is more difficult and also absolutely crucial for future healthy development of the child. Foreign researches suggest that the VHT method for children with a hearing impairment and their parents can very effectively strengthen the development of communication, to which a research project follows up. Its goal is to apply VHT method within the described type of family. For the research, a case study design was used, and by using a VHT, a semi-structured interviews and self reporting scales, possibilities and limits of VHT method used in the family were evaluated. This evaluation proved to be very positive and at the same time it is in a consonance with findings of foreign studies. Submitted case study and its research findings contribute to the broadening of application areas in which VHT method can be used, and at the same time these findings and...
Primary Architecture / Teaching architecture to the younger generation
Menšíková, Barbora ; Veselá, Markéta (referee) ; Ponešová, Barbora (advisor)
Due to the complexity of the whole current educational system, the proposal creates an alternative form of teaching aesthetic perception - art and architecture, a kind of intermediate stage, which joins the existing curricula of compulsory education of children as a supplement or extension. The proposal is therefore a space - an artistic institution, focusing on the education of the young generation from the ranks of the general public. The cooperation of the School of Architecture with educational institutions creates an environment where the student emerges from the academic community and educates the general public. On the contrary, the public enters the environment of the Faculty of Architecture and offers architects a new perspective.
Primary Architecture / Teaching Architecture Elements
Juřicová, Magdaléna ; Veselá, Markéta (referee) ; Ponešová, Barbora (advisor)
The thesis addresses the connection of the Faculty of Architecture and the Faculty of Fine Arts in the newly designed building. Both faculties are defined primarily by practical creation and corresponding elementary teaching spaces - studios. From these basic elements literally grows the final form of the school. The design process itself is accompanied by constant changes and the search for adequate spatial expression for individual functions of the school. The final solution is the result of gradual rationalisation, finding certainties and sticking points in the proposal. In the end, the barest, most elemental, is crystallized from a multitude of variations and reflections on space.

Antimicrobial activity of selected natural extracts
Šandová, Lucie ; Veselá, Mária (referee) ; Zemanová, Jana (advisor)
The aim of the bachelor thesis was to determine antimicrobial activity of selected natural extracts, specifically three model extracts made from purple coneflower (Echinacea purpurea) and four commercial extracts – true lavender (Lavandula angustifolia), lemon balm (Melissa oficinalis), echinacea herbal drops (Echinacea purpurea) and echinacea extract (Echinacea purpurea) with ginger, against selected microorganisms. Theoretical part is focused on description of bioactive substances that are found in plants. It also describes extraction methods used for obtaining extracts from plant materials, methods for determining antimicrobial activity and then the use of natural extracts in food and cosmetic industry. In experimental part, antimicrobial effect of the extracts was tested against gram-negative bacteria Escherichia coli, gram-positive bacteria Bacillus cereus and yeast Candida glabrata. For determination of the antimicrobial activity, two methods (hole method and disc diffusion method) were used and compared. The highest antimicrobial activity against selected microorganisms was showed by commercial extract of lemon balm, which contains lot of geraniol and citroneloll. Significant antimicrobial activity had also been shown by commercial extract of true lavender. On the contrary, extracts from Echinacea had not shown any antimicrobial activity against selected microorganisms.
