Quality assessment of gluten-free foods with a focus on pastries

The topic of this thesis is the production of gluten-free bread from naturally gluten-free flour, which will be enriched with suitable additives that will increase antioxidant activity and naturally effect on the structure of the pastry, so it will meet the sensory requirements of final consumers. The literary part define, which proteins can be found in cereals, what does the gluten means, its function in the pastry and which diseases can cause. In connection with these diseases, a gluten-free diet for improving the patient's health and suitable foodstuff are briefly described. The literary part is concluded with the theory of sensory evaluation. The practical part deals with the production of naturally gluten-free breads enriched with ingredients from kitchen onions (Allium cepa L.) and subsequent sensory evaluation of this bread. Selected statistical procedures were used to obtain, processed and evaluated data. Antioxidant activity was also monitored and evaluated. By using texture-meter was find out, what effect has additives on aging of gluten-free bread.
Revolutionary Amoebas: Political Versatility as the Art of Resistance in Contemporary Germany

This dissertation is interested in what kind of self and techniques of resistance are acquired in order to be a revolutionary in the contemporary West. While I was conducting an ethnographic research between 2008 - 2015 following young activists from Germany in urban spaces of demonstrations, riots, direct actions, jails, the Internet, universities, housing projects, parent's homes in Germany as well as during solidarity trips to Mexico, Argentina, Israel/Palestine, Denmark or Italy, it was discovered that a concept of political versatility may be helpful here. Young revolutionaries are what I call revolutionary amoebas. Revolutionary amoebas acquire capacities to discuss at universities or public debates, write texts, talk, but they manage to argue beyond the discourse by throwing stones or burning cars in riots, organizing direct actions, smashing corporate properties, beating neo­nazis, attacking ultra­nationalists, or actively defending themselves against the police. As citizens of advanced liberal democracy, they enter public discussions of contested opinions, persuade people with their critical arguments and a few of them even vote, but they as well explore the political terrain considered illegal. - Typology of rural space in the Pilsen Region and evaluation of soft factors of the development Presented diploma thesis deals with an important theme of rural differentiation. The goal is to create a typology of rural space within the Pilsen Region by potential of the development using quantitative data and then verify the typology by qualitative research of soft factors. The verification consists firstly in research of perception and regional identity of rural regions from the point of view of actors involved in rural development within the Pilsen Region and secondly in evaluation of appearance of chosen rural municipalities to observe the differences of each type. Theoretical part is focused on issues of differentiation of space, institutional theories with accent on application in the rural areas and rural development issues. Analytical part consists of created typology using component and cluster analysis. Further it presents the results of analysis of perception and regional identity of rural regions using method of semi-structured interviews and results of analysis of appearance of municipalities using standardized observation. This bachelor thesis is focused on phraseology of Russian and Czech languages which meanings contain antonyms beautiful - ugly. Examined are idioms describing the external appearance of humans, they are divided into different groups - beautiful, ugly, fat and slim. The second part of this thesis consists of the evaluation of our questionnaires in which we have involved Russian and Czech high school students living in the Czech Republic. Social Meanings of Male Beards

Social meanings of male beards Abstract The study focuses on male beard modification, primarily on the significance of beard in the society and beard's ability of social communication. The study is based on the theory of first impression and categorization; male beards are regarded as source of conflictual and cooperative action. Theoretical part draws on previous research about attributed characteristics of beard, fashion and social communication of beard in the past, especially on the European continent, where beards communicated ethnicity, social status, gender and generational distances, sympathy and antipathy to the current events and values. Furthermore, the thesis concentrates on social communication of beard in the present and its perception in the society. Empirical part is based on a questionnaire survey and answers to the question which characteristics are currently attributed to male beard modification in the Czech Republic. Final findings confirm that beards are perceived as symbol of masculinity, dominance and social maturity, clean shaved face and face with mustache or goatee, taken as signs of conformity, are generally well-received, while faces with stubble receive negative ratings.
Adolescents' concepts about ideal male appearance

This bachelor thesis deals with the adolescents' concepts about ideal male appearance. The work is divided into two parts - theoretical and empirical. In the theoretical part, I focused on the presentation and description of the different concepts and areas that are relate to the topic. In the first chapter I dealt with the developmental period of adolescence, where I first characterized this period and subsequently described the individual changes that adolescents are going through. The next chapter was devoted to the topic of gender, where I define and describe the basic concepts of gender issues and I closer focused on masculinity and masculine behavior. Subsequently, I focused on the classroom as on the respondents' environment, in which my research was originated. The last chapter my theoretical part was devoted to the issues of appearance and the ideal of beauty, where I first tried to describe the general trend of ideal beauty and subsequently I focused on the ideal of male beauty. In the empirical part I analyzed the results of my research, which was consisted of three primary methods - observation, questionnaire and Repertory grid. The Body Image of Female University Students with Regard to Possible Transgenerational Transfer

The thesis focuses on female university students and their body image in relation with their parents' body image. The satisfaction of the students with their own bodies depends on many elements such as the influence of the media and the judgements of their peers, family and authorities. A substantial part of our thesis is an unprecedented analysis of the possibility of a trans-generation transfer of the extent of satisfaction with one's own body from parents to their daughters. We have used the quantitative research strategy to assess the results gathered from questionnaires focusing on the students' as well as the parents of both male and female children's perception of their own bodily features. Physical parameters such as height and weight were also checked. The study also focused on whether the trans- generation transfer is affected by the way the parents treat their children during childhood and adolescence. Our results have shown that there is a positive relation between the student's and the mother's body image. This positive relation can be perceived as a consequence of the trans-generation transfer which is probably a mechanism of observational learning.
