Bioactive substances of rose hip
Ďubašáková, Mária ; Skoumalová, Petra (referee) ; Veselá, Mária (advisor)
The aim of this master´s thesis was to determine the concentration of bioactive substances such as total polyphenols and flavonoids as well as the total antioxidant capacity in tea extracts from Rosa canina. In the second part, an experiment was found to detect antimicrobial activity and an effective concentration of ethanol against selected bacteria. The theoretical part is focused on description of natural antioxidants and their effect on free radicals, description of tea, description of rose hazel and possibilities of spectrophotometric determination of natural substances and eventually basic distribution of bacteria. In the experimental part, ethanol and aqueous extracts were prepared in which the total number of polyphenols, flavonoids and antioxidant effects. The results of the determination of polyphenols and flavonoids show that the solvent with ethanol is more suitable for flower fermentation and water is more suitable for dropping the rose. Comparison of the antioxidant activity of macerates showed no significant differences; slightly higher antioxidant activity showed macerates from pink flowers. The extracts showed antimicrobial activity against Micrococcus luteus and slightly against Bacillus cereus. The highest antimicrobial activity was determined for the micrococcus luteus
Drinking regime in adolescence
ŘÍHOVÁ, Eliška
The bachelor thesis deals with the fluid intake at the age of adolescence. The aim of the work was to evaluate the quality and the total amount of fluids received at the age of adolescence. The thesis is divided into two parts, theoretical and practical. The theoretical part deals with the influence of fluids on the teenager body, is attentive to diseases caused by surplus or deficiency of fluid intake, deals with the composition of fluids and their effects on the organism. The research was made through a questionnaire survey that examines the total fluid intake, the composition and types (tea, coffee, milk and soups) received in 24 hours, the most frequent daytime of fluid consumption and their intake depending on the activity of the teenagers. The obtained data were evaluated and then graphs and charts were created. Research shows that more than a half of respondents have high fluid intake. About one third has a physiological fluid intake and one fifth has a low fluid intake. Respondents mostly drink drinking water in fluid intake. On the contrary, teenagers drink less coffee and energy drinks. They mostly consume instant coffee and at least Viennese melange, ice coffee, 3 in 1, Irish coffee and americano. The most popular type of tea is fruit tea and the least popular is herbal tea. More than a half of respondents consume half-fat milk and at least low-fat milk. The most popular soup is chicken or beef broth, the least popular are broccoli and garlic soup. The most respondents often consume fluids at home in the afternoon and evening, at least during lunch. The fluid intake is also influenced by sports activity. Most of the teenagers are engaged in some sports, a small number of teenagers do not any sport at all. The most popular sport is football, the least popular is volleyball.

On the basis of statistical data and examination of archival sources comes with the definition of the middle classes of the population, which those commodities consumed. The thesis shows the distribution of consumption of commodities based on the survey in blue-collar and white-collar families. Furthermore provides insight into the lives of families, distribution of their spending and the size of income. It refers to the representation of cocoa, coffee, tea and chocolate in the consumer basket and shows the elasticity of the mentioned commodities. For the central part of the research of the dissertation thesis chose the Czech territory only, because here were without difficulty accessible data sources. The Dissertation thesis clarifies the causes of consuming cocoa, coffee, tea and chocolate and concludes that each was consumed from another purpose, which resulted status of these commodities. Tea consumption has been designed especially for the higher classes of the population, chocolate bought mostly white-collar family, but over twenties speared consumption of chocolate products also among the middle and lower classes into the population. The chocolate products were subject to early 20s of the luxury tax. Cocoa was used in connection with cooking and baking, but families didnt use this product frequently. Coffee drank all layers of the population, but consumption was based on the social status of the consumer. Very frequently families consume rye coffee and chicory coffee. Dissertation thesis also highlights the regional differences between the classes, which were further intensified. Thesis examines in detail the amount of the duties of the commodity, which in the interwar period varied widely, and concludes that the duty to disproportionately increase the price of products and made it impossible for consumers to buy more of cocoa, coffee, tea and chocolate.

Study of properties and effect of some natural antimicrobial substances
Horňáková, Nikola ; Kostovová, Iveta (referee) ; Márová, Ivana (advisor)
This bachelor thesis is focused on the testing of natural antimicrobial substances of plant origin, dealing with their characterisation, their effect against the microorganisms, optimization of antimicrobial testing and increasing of efficiency of their active compounds. Theoretical part of this thesis describes a characterisation of used natural species, their important properties, spectrophotometrical methods applied in determination of active compounds, opportunities of stabilization of natural substances and various techniques of antimicrobial testing. In experimental part 8 kinds of tea and non-tea plants (Pai Mu Tan, Formosa Gunpowder, Gunpowder Black, Honeybush, Lapacho, Aspalathus linearis and Paullinia cupana) were used and combined with 6 herbal species (Syzygium aromaticum, Urtica dioica, Hippophae rhamnoides, Matricaria recutita, Plantago lanceolata and cinnamon), extracted by different solvents (water, ethanol and dimethyl sulfoxide). In these extracts amount of antioxidants and effect to three bacterial cultures (Escherichia coli, Micrococcus luteus and Serratia marcescens) were determined. To improve antimicrobial, antioxidant activity and stability aqueous tea extracts were encapsulated into liposomal particles.
