Allergen labelling in catering facilities

The new EU food legislation established an obligation to indicate allergens to prepared meal and defined specific ways of providing this information. The aim of this work is to look for possibilities of allergen labeling on menu. This work is devoted to the analysis of customer satisfaction with individual ways of information about allergens. In conclusion, there is a recommendation that includes the requirements of European legislation and the opinions of customers of catering facilities.
Bronchial asthma in the practice of paramedic

Astma bronchiale is a lifelong chronic respiratory illness which affects all the age categories of population. The aim of this final work is to obtain knowledge and to analyse paramedics´ approaches used during a diagnosis and providing prehospital urgent care to patients affected by this illness.The bachelor´s work is divided into a theoretical and a research part. The theoretical part deals with the anatomy of the respiratory system, process of breathing, diagnosis and treatment in prehospital urgent care.The research of this work was realized by using recorded interview with paramedics. The aim of this research is to show the reader more viewpoints to this issue and to outline the experience of paramedics with treatment of this illness. This research demostrates that paramedics get in contact with the asthma bronchiale several times in a month, they are familiar with this illness and they know methods of its treatment. The result of the work shows how difficult the diagnostics of this illness is. Differential diagnostics also points to broad-spectrum of illnesses. Eventually, we can also enroll a wrong feedback between emergency service and medical facility. Results of this work in the theoretical part help the reader to get objective information about this matters, diagnostics and treatment of this illness in prehospital urgent care. The main contribution of this work should also be the view to the methods, approaches and experiences of paramedics during the treatment of the asthma bronchiale in prehospital urgent care. The output of the bachelor´s work is a brief manual for paramedics showing how to proceed during diagnostics and treatment of the asthma bronchiale.

Bread has been one of the basic foodstuffs for more than 30,000 years. It´s prepared mainly by baking, where gluten plays an important role. Gluten is important for holding the gas in the dough to achieve the desired structure, texture and volume. At a time when agriculture began to develop, a disease of gluten began to emerge. One of the best known is the intolerance of gluten, the so-called celiac disease, which affect sapproximately 1 % of the world's population. The cause is gluten-rich proteins (prolamins and glutelins), found in wheat, rye, barley and oats. The second known diseaseis gluten allergy, which is often confused with celiac disease. The difference consist in a different autoimmune reaction to the presence of glucose, when the immunization on glucose produces IgE immunoglobulin and does not damage the small intestine mucosa The only possible treatment for patiens with a dinase is a strict gluten-free diet. Gluten-free breads and pastries are one of the main foods for celiac and allergy sufferers. Preparing a dough without gluten is difficult. Proper selection of raw materials plays an important role in meeting sensory properties. The aim of the diploma thesis was to prepare suitable recipe senriched with selected sources of antioxidants. In total, six different recipes were prepared, both from cereal gluten-free flour and legumes flour. Curcuma and red onion skin were selected sources of antioxidants. In the practical part a sensory evaluation of all samples of bread is performed. There was a positive evaluation of the questionnaire itself. When to Cheb the suitability of raw materials and procedures for dough preparation and baking. Based on the DPPH and FRAP tests, antioxidant aktivity was evaluated for all gluten-free bread. Bread senriched with red onion skin have the highest antioxidant activity in both basic bread and basic bread with legume flour. Thus, it can be said that onion skin effectively increase antioxidant activity. In the final part, a financial evaluation of all six types of gluten-free bread was made on the basis of raw materials used as compared to those already purchased in the shop. Based on this finding, it can be said that home preparation is a cheaper option.
Different capacity of in vitro generated monocyte-derived dendritic cells of newborns of healthy and allergic mothers to prime immune responses

(EN) Reduced microbial stimulation of an immature neonatal immune system can lead to a poor balance adjustment of immune responses, thus contributing to the development of allergic diseases, whose incidence continues to rise. One of the promising precautionary measures seems to be an early preventive administration of probiotic bacteria to pregnant or nursing mothers, or to newborns. Previous works have described a beneficial effect of Escherichia coli O83:K24:H31 (E. coli O83) in the prevention of allergic diseases. In order to contribute to the clarification of E. coli O83 effects on the neonatal immune system, its immune- modulating properties were tested in vitro on umbilical cord blood cells. The ability of E. coli O83 to support the maturation of in vitro-derived dendritic cells from cord blood precursors (moDCs) of the children of healthy (children with a relatively low risk of allergy) and allergic (children at a relatively high risk of developing allergies) mothers was tracked by flow cytometry, qPCR and ELISA. Probiotic bacteria-stimulated moDCs were subsequently cultured with autologous naive CD4+ T lymphocytes and immune response polarization was also characterised by flow cytometry, qPCR, and ELISA. Different characteristics of cord blood cells of newborns of healthy and allergic mothers

The prevalence of allergy is increasing and it is becoming a serious problem not on- ly in medicine, but also in social and economic terms. The most effective way to minimize the development of allergic diseases is preventive measures. In recent years, many studies have attempted to confirm or rebut the hypothesis that early administration of probiotic bacteria to newborns and pregnant women before birth could have preventive effects on the development of allergy. In the Czech Republic, the probiotic strain Escherichia coli O83:K24:H31 (EC O83), being registered with the State Health Institute for Drug Control under the name Colinfant Newborn, has long been used to prevent allergies and paediatri- cians have long been known and used it against various diarrhoea. The aim of this work was to elucidate the effect of EC O83 on CBMC (cord blood mononuclear cells) and to compare the ability of CBMC of healthy mothers (children with a relatively low risk of developing allergic disease) and allergic mothers (children at high risk of developing allergies) to form cytokines in response to EC O83 stimulation. Health benefits and risks of adherence to gluten-free diet

During the last approximately ten years, an increasing precentage of the world population follow a gluten-free diet. On one hand is the reason more and more frequent diagnosis of celiac disease, allergy on gluten or nonceliac gluten intolerance, on the other hand there is a modern trend to connect gluten-free diet with healthy lifestyle and weight loss or shows gluten as human health endangering substance. Bachelor thesis complies recent data in literature about single nosologic units that require adherence to the gluten-free diet, as well as legitimacy or unfounded exclusion of gluten from diet without any medical cause.

The aim of this bachelor thesis was to gain a comprehensive view of the gluten-free diet and to confirm or refute the claim that the gluten-free diet became a fashion trend in nutrition. The theoretical part explains the relationship between gluten-free diet and diseases caused by intolerance of gluten. Greater attention is paid to the most serious of these, celiac disease, whose only treatment is gluten-free diet Research of commonly available sources for the general public has produced a list and description of the most common myths about a gluten-free diet that has been confronted with facts emerging from a medical perspective. Anonymous questionnaire survey was carried out on a sample of customers who bought gluten- free food in the Sklizeno shop, in the Czech National Bank's canteen, on a random sample of people who solve healthy lifestyle and clients of private nutrition counseling with experience with gluten-free diet. The questionnaire looked at awareness of the gluten-free diet, the knowledge about it, the experience, the reasons for the decision-making process. Food intolerance- facts and myths

This bachelor's thesis focuses on the facts and myths about two kinds of food intolerance: celiac disease and lactose intolerance. The thesis consists of a practical and a theoretical part. The theoretical part is further divided into three sections. The first one focuses on celiac disease and describes gluten, epidemiology, etiology, pathogenesis, symptoms of the disease, diagnostics, dietary solutions, celiac disease screening, other similar diseases and also a comparison of allergy to gluten and sensitivity to gluten as these are commonly confused. The second section focuses on lactose intolerance and describes lactase, epidemiology, etiology, symptoms, complications, diagnostics and treatment. This section also focuses on milk allergy, which is often mistaken with lactose intolerance. The third section focuses mainly on the facts and myths and contains tables showing the differences between celiac disease, lactose intolerance and milk intolerance. The most common myths about celiac disease, gluten, gluten-free diet and milk are also mentioned. We observe significant increase of herbal remedies used in paediatric patients in last decades. The goal of this work was set to examine available information about herbal safety. The list of herbs that are dangerous or inappropriate to use in children age was made. The herbs were grouped into simple classification system of herbal safety. In addition to chapters describing herbal safety the work contains knowledge about their general use in paediatrics phytotherapy, the pros and cons of their use. To gather the data of web research and scientific literature were employed. The analysed data were published between 1968-2017 and were collected using PubMed, ScienceDirect and Google Scholar.
