Implementace biopotravin a lokálních potravin do společného stravování

Various efforts to reduce greenhouse gas emissions are increasingly being seen around the world. Agriculture and the food sector contribute to greenhouse gas emissions, and therefore it is necessary to introduce measures aimed at their mitigation. Organic food and short supply chains are associated with lower environmen-tal impacts, and school canteens offer great scope for mitigating climate change just by implementing these measures. An often-mentioned problem is the higher financial costs of buying organic or locally produced food. This work shows that, in the case of choosing the right ingredients and involving the right logistics, the fi-nancial costs for one portion do not have to exceed 1.5 % of the price increase. The work also shows that the implementation of organic food is not necessarily as key to mitigating climate change as the implementation of local food. To apply these results to other cases, research focused on specific canteens and their possibilities for the supply of local food is necessary.
Sustainability of public catering - Possibilities of implementation of organic products into the public catering

The bachelor's thesis deals with sustainability in communal catering and the possibilities of implementing organic food into public catering. The theoretical part of the work is focused on the development and structure of communal catering in the Czech Republic. He also deals with purpose-built catering, specifically competitive catering, school catering and current legislation related to it. The next chapter deals with the certification and control of organic products and organic food. The concept of organic farming is briefly explained, which is closely related to the concepts mentioned above. Furthermore, the regionality of food production in the given territory is discussed here, and towards the end of the theoretical part, the application of bioproduction in public catering and its perceived benefits, as well as obstacles, are mentioned. An organization ensuring the operation of selected corporate, school and public canteens was selected for the empirical part of the work. As part of the work, the main barriers to the introduction of regional foods and organic foods into this facility were evaluated and the possibilities of their application were assessed in connection with the availability of food raw materials from local suppliers. Furthermore, the consumption and costs of the main food raw materials during the year and the costs of replaceable equivalents in organic quality were calculated. At the end, the difference in costs against the current state was calculated and the result was then evaluated.

The basis of this bachelor thesis is an architectural study prepared in the subject AG034. The theme of the work is the design of a nursery school that will meet the requirements of the 21st century. The proposed building is located in the city district of Brno-Stránice. The lot is located on the outskirts of the Masaryk district, near the Square Míru. The site is part of the Cyrilomethodian Grammar School and this fact is taken into account. The terrain on the lot is sloped from west to east and the design uses the height difference of 7.1 metres to allow entry from three elevation levels. The main entrance is from the street in the west side of the property. The building can also be accessed through the campus itself, to which the nursery is affiliated. A new parking lot for parents and employees is proposed for the property, which includes 7 car stalls, including an immobile one. Around the house there are green areas, a playground with an artificial surface and a sports ground. The south side of the property consists of a stone wall, which is simultaneously a fence with a neighbouring property. The building has 2 upper floors and one underground level. The first above-ground floor contains the main operation of the nursery, the second above-ground floor acts as the main entrance and at the same time the facilities for the teachers and the underground floor is reserved for the operating part of the building such as TZB, warehouses and food preparation. The building is designed as a woodwork in combination with a masonry lower structure. The roof of the building above 1NP is designed as an operational vegetation roof. The second roof above 2NP is also a vegetation roof but without operation. I was inspired by dualism when I designed the building. The building is meant to be clean, functionalistic for passers-by, but for children it provides a reflection of their soul in the form of a "woozy" inner facade, which is also written into the interior itself.

Eva Hrobařová Name: The teaching materials for chemical education - experimental and practical chemistry with different kind of food ABSTRACT: In this thesis I elaborated the theme "The teaching material for active chemical education - experimental and practical chemistry with different kind of food". I created a questionnaire with name "Availability of laboratories and schoolrooms of chemistry in college". The results of this questionnaire were a base for choice of the experiments with different kind of food. Each experiment is completed by photos and a few questions for students. In this work I also analysed several thesis about practical and experimental chemistry. In this thesis I lay stress on importance of experimental and practice chemistry in colleges in Czech Republic. My task was to create easy teaching materials for active education and the utilization of easy experiments to illustrate theory. The experiments are very easy, it's not necessary many tools and it's not even necessary to use chemical laboratory. .
Uplatnění regionálních, sezónních a ekologických potravin ve školních stravovacích zařízeních Jihočeského kraje

Information on the use of regional, seasonal and organic foods and opinions on the possible improvement of the current status were investigated in the school catering facilities of the South Bohemian Region. 35 completely filled questionnaires were obtained and evaluated from addressed respondents (heads of catering facilities, directors) of nursery and primary schools. Based on their assessment, it was found that most catering establishments have permanent food suppliers, usually 2 - 3. Kitchen managers prefer suppliers with a larger assortment (wholesalers, supermarkets). 85% of canteens said that regular suppliers give them discounts. From the region's farmers, 35-45% of the canteens take main foods, meat, milk and dairy products, less fruit and vegetables. The most frequently purchased regional food is potatoes, while fish and legumes are mainly imported. Approximately 80% of canteens do not include organic food in the menus. The main reason is their difficult availability and higher price. This is confirmed by the finding that the more the supplier is a local farmer, the fewer canteens use organic products and buy conventional foods. A frequent reason for not using regional food and organic food in the canteens is low awareness of their quality, fear of high prices and limited range. It is therefore necessary for farmers to improve the range of supply, distribution and marketing. Regular workshops for managers and demonstration courses for canteen employees on how to effectively use these foods in menus can improve the situation. Promoting these foods is also important in order to raise awareness among parents and children.
Možnosti a překážky zavádění biopotravin do školního stravování na Klatovsku

In my work I focused on opportunities and barriers to the introduction of organic food in school catering facilities and finding satisfaction diners. The theoretical part describes the scope and structure of organic farming, production, distribution and use of organic products in the Czech Republic and in the region Klatovsko. The emphasis is on organic food consumption, ways of their sales and the offered range. Further, are mention the factors and agents that affect the use of organic food in catering establishments. In the practical part was carried out a survey in selected school canteens and schools at Klatovsko. In the work were observe view of students elementary abd secondary schools on catering, diversity of dishes, employee access or weaknesses which should be improved. For employees of catering equipment was checked usage of local produce, organic and seasonal food in the menus.
Chemistry through the eyes of the public

This bachelor thesis deals with the public view on chemistry. It has two parts: theoretical and practical. In the first chapter of the theoretical part I briefly describe the development of chemistry in six epoches from the oldest one to the modern period. The second chapter is devoted to the roles of chemistry in today's society. The third chapter is focused on the public view of chemistry or chemical products. In this chapter I am discussing the public's fear of chemistry, position of chemistry as a school subject, attempts to reduce the chemistry position in some industrial fields (replacing standard food with organic food and classical plastics with bioplastics) or who influences the opinions on chemistry. In the fourth chapter of theoretical part I deal with the attitudes and their evaluation. The practical part is based on a questionnaire survey realized using an electronic questionnaire. The basic information about the respondents and more detailed analysis of some of the respondents answears are presented in the evaluation of this questionnaire. Organic Food Awareness of Grammar School Students

The theoretical part of the thesis focuses on organic food and ecological agriculture problematics. The primary objective is to point out advantages and disadvantages of organic food and therefore, I mention comparison of organic and conventional food in the thesis. The practical part investigates attitudes and levels of knowledge of students of selected lyceums about organic food. The quantitative research (survey) was conducted at three lyceums in Prague. The statistical methods were used to verify the stated assumptions. While processing the survey I have learned that students struggle with the field of healthy nutrition than with the field of ecological agriculture and therefore, a proposal of healthy nutrition and organic food lecture has been chosen as the pedagogical output of the thesis. A tutoring presentation will focus on students of lyceums and its purpose will be to raise awareness about this problematic.
The role of diets in formation of a sustainable agro-food system: potential of school food

This master thesis deals with the issue of sustainable diets and the potential of the promotion of sustainable principles in public food procurement. The theme is introduced in broader context of environment, public health, historical development, international influences, significant theoretical approaches and fundamental factors affecting current state of diets and nutrition. The aim of the thesis is to specify universal principles of sustainable diets, which were derived from critical review of scientific literature and other relevant texts. The character of this thesis is dominantly theoretical. Discussing the potential of applying the principles of sustainability from the side of public institutions is the main theme of the second part of the study. The research question is related to the possibilities of local organic food consumption in school food system in Czechia. Main results show problematic combination of the requirements for both organic and local food in the context of the volume of school food demand and relatively small local organic production. In general terms the contribution of this thesis is the introduction of the research issues of geography of food and presenting the possibilities of further research. key words: sustainable diets, nutrition transition, food, organic...
