Methods for assessment of body composition
Krátká, Veronika ; Hrstka, Miroslav (referee) ; Vránová, Dana (advisor)
This bachelor thesis deals with the composition of the human body and methods of its analysis. The theoretical part is focused on basic food nutrients, nutrition recommendations, energy needs of the organism, body composition and methods for determining body composition. The experimental part contains a comparison of two methods for determining body composition – a method of bioelectrical impedance and a method NIR-spectrometry. Other section is devoted to a study of the eating habits of group of students, consisting of evaluation of diets and the questionnaires.
Monitoring of changes of chemical parameters in wine production
Dlapalová, Kristýna ; Vespalcová, Milena (referee) ; Vránová, Dana (advisor)
This bachelor work deals with chemical ganges of the wine must during the fermentation process. We compered the sample must with addend commercial yeasts and indigenous yeasts. The theoretical part describes the vine and its variety. The variety Saugvinon is central of this work and it is more described.. The theoretical part describes the structure of grape and its chemical technology of wine production and wine disease. The production technology is divided into different steps of the production (eg. picking the grapes, pressing, fermentation and wine training). The experimental part describes the methods used in the determination of chemical parameters including the chemicals and equipment. The results are summarized the results of the determination of reducing sugars, titratable acidity, alcohol and pH must. The results are evaluated and commented upon in the discussion.
Yeasts and wine
Palíková, Petra ; Vadkertiová, Renata (referee) ; Vránová, Dana (advisor)
This thesis deals with isolation and identification wine yeasts from grapes and must. For analysis was used white wine Sauvignon that was grown and producing after needs ecological agriculture. Remove samples were processed in laboratory and by the help of dilution method were obtained pure culture isolated yeasts. In the following step, by the application of commercial kit UltraCleanTM Microbial DNA Isolation Kit we were able to isolated individual DNA that it was used to the next analysis. Isolated DNA was amplification by PCR method with ITS1 and ITS4 primers. PCR products were detected on agarose gel. Amplification samples were chopped five restriction endonucleases: HaeIII, HinfI, TaqaI, AluI and MseI. Chopped DNA was detected by the same way as PCR products and it was compared with restriction patterns of collection yeasts. In the next step it was compared genetic similarity of isolated yeasts by using BioNumerics software. As a criterion it was used Pearson coefficients and UPGMA clastering analysis. The result is dedrogram of genetics similarity isolated yeasts.
Infection of salmonelosis, their source and diagnosis.
Valkus, Martin ; Veselá, Mária (referee) ; Vránová, Dana (advisor)
This bachelor‘s thesis deals with infection of salmonelosis, it’s source, prevention and diagnosis. Theoretical part includes general information about Salmonella species and its morphology. It describes pathogenesis, source of infection, clinical symptoms, treatment and diet recommendations. It analyzes statistics of number of infection occurrences in Czech Republic. It also deals with prevention of infection origin on schools, population foreknowledge and climatic effects. Experimental part of this thesis contains description of optimization procedure of identification Enterobacteriaceae by adjusting of pH of prepared medium MIU.
Lactic acid bacteria and their utilization
Jiříková, Ivana ; Vránová, Dana (referee) ; Babák, Libor (advisor)
This bachelor thesis is aimed at the study of lactic acid bacteria. Within the frame of this thesis I have performed a literature research into findings about these bacteria. The first section is focused on the general bacteria identification and division into separate genus groups. It also describes the cytology, metabolism and industrial use of milk fermentation bacteria.
The relationship between kidney stone formation and the composition of food.
Zbořilová, Eliška ; Márová, Ivana (referee) ; Vránová, Dana (advisor)
This bachelor’s thesis deals with causes of formation and identification of urinary concrements. The theoretical part of this study includes basic definition of problems with urolithiasis, points to risk factors of formation of urinary concrements and deals with their classification in accordance to their chemical composition. Important part of this study has been devoted to dietary habits, because composition of ingested food and daily intake of liquids is very important for formation of concrement in urinary tract. Analysis of urinal concrement and following identification of its composition is absolutely unavoidable for definition of subsequent therapeutic method of treatment of urolithiasis. In the experimental part, infrared spectroscopy has been used for analysis of urinal concrements. The calibration lines of the most frequent two-component mixtures of urinary concrements have been scaled by this method
The use of near-infrared spectroscopy for characterisation of raw material for sunflower oil production
Vystavělová, Petra ; Vránová, Dana (referee) ; Pudilová, Ludmila (advisor)
This diploma thesis provides summary information about using of near infrared spectroscopy for monitoring of high oleic acid content in sunflower seed. The calibration for high oleic sunflower seed was performed by using calibration model PLS - „Partial least squares. Gas chromatography was used as a reference method. Based on this knowledge thirty samples of high oleic sunflower seeds were measured and evaluated on this calibration. The last part of diploma thesis consist of comparison of oleic acid results measured by near infrared spectroscopy and gas chromatography used as reference method, and discussion about the measurement accuracy and evaluation of suitability of using these methods.
Disinfectants in food
Romanská, Veronika ; Vítová, Eva (referee) ; Vránová, Dana (advisor)
The aim the of bachelor thesis is description of chemical disinfection, which is used in food industry to eliminate microbial contaminations of food, food intermediates and foodborne diseases, which can occur if hygienic regulations are not observed correctly. The experimental part of the bachelor thesis characterizes the method which was used to specify the disinfecting effect. This method was used to determine two types of disinfectants which contain two different active ingredients. Based on the results, two disinfectants were evaluated and compared.
The significance of magnesium for human health
Škeřík, Jan ; Hrstka, Miroslav (referee) ; Vránová, Dana (advisor)
Aim of this bachelor thesis was to compare different forms of magnesium. The characteristics and history of magnesium was briefly described at the beginning of the theoretical part. The following chapters explain the importance of magnesium in the body, hypomagnesemia, hypermagnesemia. Another section describes magnesium effect on various diseases, increased intake of magnesium and magnesium metabolism. The ninth and tenth chapter describes the effects of nicotine and alcohol on the metabolism of magnesium and magnesium content in drinking and mineral water. Conclusion of the theoretical part is dedicated to the description of the analytical methods of dosage forms. At the heart of the practical part was using several commonly used methods to determine best magnesium addition. It was the method of determination of the mass uniformity, determining magnesium contents in the tablet, the determination of disintegration, dissolution determination and hardness determination.
The measurement of total alkaloids in tobacco
Pipková, Renata ; Vránová, Dana (referee) ; Omelková, Jiřina (advisor)
The aim of this diploma thesis is the assay of total alkaloids in different tobacco types. To measure the content of total alkaloids are utilized types of tobacco used for preparation of tobacco blends and consecutive production of cigarettes. The samples of analyzed tobacco include various countries of cultivation and different crop years. There is described tobacco as a plant, in it contained alkaloids and the utilization of tobacco in the theoretical part. In more detail it deals with the production and construction of cigarettes which is closely related to the content monitoring of total alkaloids in tobacco. The contents of total alkaloids are determined by the continuous flow analyzer- SKALAR. On this spectrophotometer are set the contens of reducing sugars as well. The comparison of total alkaloids contents and reducing sugars from the perspective of single tobacco types, countries of cultivation and crop years is clearly summarized in the experimental part of the thesis that was performed in the company Philip Morris ČR, a.s.
