Use of DNA analysis in testing of authenticity of meat products

This bachelor thesis deals with issues of authenticity and possibilities of its determination. In the theoretical part there is a literary research on the authenticity of food with a focus on meat and meat products. The practical part is focused on determining the red pepper in a certain meat product, where the correctness of the results is monitored.

This bachelor's thesis is concerned with unorthodox animal species in agritourism. At the beginning of this thesis there is defined rural tourism and also utilization of unorthodox animal species in this kind of tourism. In the following chapter are described biological characteristics, technologies and techniques of farming in agritouristic facilities, mainly with focus on llamas, ostriches, crocodiles and bison. A part of the thesis is also an analysis of significance of the animal farming production and animal-assisted therapy. The last part is dedicated to characterization of agritouristic facilities which engage in farming of unorthodox animal species - Lamacentrum Hády and Ostrich farm Doubravice nad Svitavou. There is also included economical evaluation of these establishments. Moreover in Lamacentrum Hády was via a questionnaire survey examined the question of adequate promotion of Lamacentrum Hády among the general public in Brno.

The aim of this master thesis on the topic of: Evaluation of the effects of breeding and species belonging to livestock on the strength of the muscle fibers was to establish the influence of factors (breeding and species affiliation, sex, age at the time of slaughter, carcass weight, net gain, etc.) on the strength of the muscle fibres in these species of animals: cattle, pigs, rams, poultry, pheasants. The thinnest muscle fibers are measured by rams. Significantly (p <0.01) higher value diameter of muscle fibers should slaughter roosters, followed by pheasants and cattle. The strongest fiber (p <0.01) had slaughter pigs. The results show that pork is the observed species grossest muscle structure, while the finest muscle structure and thus have the finest meat rams. Significant influence on the strength of muscle fibers in most studied species of livestock should carcase weight and age at the time of slaughter. The strength fibers with age and carcass weight increased significantly.

Bachelor thesis Assortment and evaluation of the quality of meat products is concerned mainly with history and present of treatment of meat and meat products, their division into separate kinds. Further it is concerned with division of meat products according to the technology of profuction, their traditional and legislative division. Next part deals with analytical setting -content of separate parts of meat products. The thesis also discusses flaws of meat products and hygiene of their production and control system of critical points of quality HACCP. The thesis also describes the supervising offices that control correctness of production and sale of meat and meat products. The last part offers possibilities of innovation in this area.

The rabbit meat has important nutritional and sensory characteristics, it is dietary and easily digestible. This thesis deals with the microbiological quality of rabbit meat focusing on microorganisms that cause spoilage. The microbiological analysis uses rabbit carcasses from home slaughtering, frozen and vacuum packed from hypermarket and from Brno butchers. There was 20 pieces of rabbit carcasses analyzed. The study monitored main microbiological parameters as total number of microorganisms, the number of lactic acid bacteria, Enterobacteriaceae, psychrotrophic microorganisms and amount of mold and yeast. Concerning conditions of supplying market by rabbit meat, there was the highest number of microorganisms found in the carcasses coming from butchers and the lowest number of microorganisms found in carcasses coming from home slaughtering. Regarding the sampling points, well known fact that the carcasses surface is more contaminated with microorganisms than muscle was confirmed. There were no significant differences between the microbiological contamination of the front part and rear part of rabbit carcasses.

This bachelor works deals with the microbiological contamination of meat. The first part deals with structure of muscles, chemical composition of meat and post-mortem changes, when muscles are changed to meat, which we can proces and consume. The main part of the thesis pays microbiological contamination of meat, factors which have influence on growth of microorganism, cytology of bacteria, yeast and molds, classification of main group of bacteria and alimentary diseases. The last section describes opportunity of fight against microbiological contamination. Part of this work is experimental determination of the major groups of microorganisms in meat.
Dining Out - The Anthropological Insight onto the Czech Gastronomy

The case study of one of the Prague restaurants was focused on verification and description of existence of two phenomena allied to food. Both of those phenomena are in link with gender and among both of them strong parallels are identifiable. First of those two phenomena is the difference of the food preference and consumption between both men and women who are either dining in such restaurant, or in general. The second one is again the difference between men and women, but this time in terms of average number of both sexes present among the employees of the restaurant. Both phenomena were able to verify and partially were described the causes and reasons, what are those rising for and under what circumstances are maintained. Nevertheless, there is a need to mention the fact that both phenomena are subjected to change as well as the whole society, therefore is necessary to food as a social phenomenon itself pay constant attention. The reason is basic and clear - food is very important part of our everyday life.
Analysis of meat demand in the Czech Republic

Meat and meat products form the highest share of Czech household expenditures for food. This thesis offers a complex view on the Czech meat market and studies in detail the determinants of meat demand. A review of the most frequently used demand models is included, from which the least squares log-log model is used for empirical analysis. The core of this thesis is the estimation of price and income elasticities of demand for various types of meat based on statistical data of household accounts from the years 2000 - 2012. The estimates are, with the exception of the price elasticity for beef, which equals 0.13, consistent with previous studies. Within the examined period, households manifest unitary income elasticity and own price elasticity of demand for meat equal to -1.2. The temporal evolution of elasticities varies for different types of meat. Important socio-demographical aspects influencing the demand for meat, such as age, education, whether the household is led by a female, and others, are also analysed.
Issues of pet goat breeding

General aim of this thesis is to describe the goat raising sector of Czech republic exclusive of commercial meat and milk production subjects. This literary research details the non-professional goat raising and interesting traits of a few selected goat breeds, more specifically Dutch Dwarf goat, Valais Blackneck and Pygmy Goat (Cameroon). Angora goat and Cashmere goat are selectively bred, as their names suggest, for wool and coat production. Goat fur manufacturing industry isnt developed in Czech republic, these breeds are therefore utilized mainly for grass grazing, land development or just being raised for the mere fun of it. Also worth mentioning is the Girgentana breed, which not so long ago stood on the brink of extinction. Each chapter covers one specific breed, elaborating on its origins, on the history of the strain, its characteristics and utilization. Popularity of non-professionally raised goats in Czech republic is on the rise thanks to their attractive colouring, relatively low groundswell, their intelligence and a friendly temper. All kinds of farm or agriculture animals are nowadays being transformed into exotic pets and the goats are no exception. According to the surveys of Czech Goat Breeder Association, the numbers of goat breeders are on the worldwide rise and the non-professional hobby breeders are an integral part of them.
