The first part of the study shows the consumption of meat in 2013 and meat production. The next part offers a descriptive account of additives that are used in meat technology. It contains an overview of the most commonly used additives, their characteristics, usages and health effects on the human body. There are also some general pieces of information about additives, their labelling, approval process and control of its use. The thesis includes an overview of the current Czech and European legislation concerning the use of additives in food production. The next chapter illustrates consequences of using food additives, the most common diseases associated with additive substances. On the other hand, the last part summarizes positive reasons for using additives, especially from a technological point of view.

Paramedic knowledge of first aid overdose legal recreational drugs
VAŇATA, David
In this bachelors thesis topic: Rescue worker knowledge of first aid for overdosed people on legal recreational drugs . I decided to define the theoretical part of a group of substances that come under legal recreational drugs . I also characterised the history and composition of those drugs , their effects on the human body , signs of intoxication and procedure of a rescure worker and application of first aid. The plot of this work, is to point out the knowledge of a rescue worker in providing first aid to patients who used and are suffering from poisoning their body from any legal drug. I am also interested in whether this procedure theory on it, is consistent to the latest knowledge and practices of a rescue workers in their field. In the practical part of my bachelor thesis, I decided to focus on a group of rescue workers of South Bohemia, with whom I have met during my practical training . As my thesis sample , I used a quantitative method that is based on 50 anonymously answered question forms . I have not specified my hypotheses. I expect this work to be help for current and future rescue workers in their studies , and also, I hope in deeper acknowledgement, improvement of working procedure, and especially, bigger attention to the substances that are tolerated by our society, although very dangerous.

Psychosocial context of antisocial behavior of adolescents: the main results of the SAHA project
Sobotková, Veronika ; Blatný, Marek ; Jelínek, Martin ; Hrdlička, M.
The study gives overview of main results of Czech part of the International SAHA project (Social And Health Assessment) in the area of antisocial behavior. The Social and Health Assessment (SAHA), a school survey, was conducted with 4980 adolescents (age 12-16years old) in Prague and 12 regional capitals of the Czech Republic. In current study data from 3023 adolescents aged 12 – 14 years are presented. K-means cluster analysis was used to identify the main clusters of antisocial behavior. Subsequently, adolescents from different clusters were compared on the levels of their substance use, affiliation with peers, parent child interactions, attachment to school, and violence exposure. Four major clusters of children were identified: the first cluster (17% of the sample) comprised children with mild conduct problems, adolescents from the second cluster (2%) reported the highest levels of all types of antisocial behavior, the third cluster (56%) included non-problematic children with the lowest levels of antisocial behavior, and children in the fourth cluster (16%) were characterized by moderate aggressive behavior (fistfights and shoving) and no other expressions of antisocial behavior. The cluster 2, children with highest levels of all types of antisocial behavior, have been found as the most risk and threatened group with high levels of other risk behaviors (substance use, affiliation with delinquent peers) and negative social influences (poor family relationships, violence exposure).

Alternative Plant Utilization for Obtaining of Significant Nature Substances: Can Weed Find a Utilization?
Wimmer, Zdeněk ; Sajfrtová, Marie ; Sovová, Helena ; Pavlík, Milan ; Svobodová, Hana ; Jurček, Ondřej ; Wimmerová, Martina
Numbers of compounds and their mixtures, which are produced by plants, can be obtained by extracting plant materials by supercritical fluids. Phytosterols and phytoecdysterotds represent an important family of these plant products. They can be used in a synthesis of supramolecular structures with possible importance for targeted effect of drugs or other biological(y active compounds. Target organisms for the compounds investigated are: (a) insects - pests and human food competitors, also important as model system in investigation of convenient application forms of biologically active compounds; (b) cell cultures used during basic pharmacological research. Supramolecular structures may form convenient matrices for practical application of the biologically active compounds. It has already been proved that numbers of medicinal or cultural plants produce important natural compounds. The present question has appeared to be answered, if so far inutile weeds may be turned into important sources of pro-drugs for disease treatments.

Leaf vegetable as a source of phenolic compounds with nutritional value.
TRÖSTLOVÁ, Daniela
The present work treats the amount of phenolic substances in salad plants. A part of this vast plant group is made of flavonoids, which are important by their accessibility and significant biological activity. Quercetin and rutin are in the main focus of this work. They are noted for their favourable biological effects. Having antioxidant qualities, they prevent and stop the lipid peroxidation and they dispose of free radicals. Flavonoids are used in medicine and can prevent the formation of chronic diseases, such as cardiovascular disease or atherosclerosis. The amount of phenolic substances in the chosen sample of ten salad plants was determined by means of micellar electrokinetic capillary chromatography (MECC) and by high-performance liquid chromatography (HPLC). We have used a freeze-dried material for the analysis. The utmost amount of quercetin was found in lettuce grown on outside garden. 48 600 mg/kg of dry matter highly exceeded the amount of quercetin in other plants. There were other phenolic substancs as well: rosmarinic acid, caffeoylchinol acid and caffeic acid. Among others, we found derivatives and colourants of caffeic acid as well.

The wheat quality comparison in terms of selected agricultural company
DUPALOVÁ, Šárka
The aim of this study was to compare the quality criteria of food wheat in the selected farm Kooprodukt, a.s for a period 2010-2014. Laboratory tests were tested in five wheat varieties content of bulk density, Zeleny test, falling numbers, N - substances, wet gluten and grain yield. Varieties with quality A - (excellent) reached higher values in almost all monitored parameters, especially the content of N-substances, falling number and in grain yield. On the other hand they were more influenced by weather. Varieties of quality B had lower values in the Zeleny test, wet gluten and falling numbers. The content of N - substances and the density differences were not so significant. Bread varieties Simila and Meritto did not show large differences in individual years and variety Beduin had the greatest variability. All evaluated parameters including revenues were influenced the most by course of the weather, at the Zeleny test it was larger genotype
