Extending of shelf life of chilled fish products

This diploma thesis was focused on the possibilities of extending the shelf-life of fish products by dipping containing seven commercial additives. ANTIBAK, MIC STAB, Bakont, SEA-F75, Misocarine LR, SAFE A Plus and AMX liquid. The effectiveness of these substances on the extending of shelf-life was evaluated on the basis of tests of TVC (total viable count), level of fat and protein oxidation, determination of nutritional parameters of muscle, and finaly sensory analysis. Experimental species were 2 important commodities for the Czech aquaculture rainbow trout (Oncorhynchus mykiss) and common carp (Cyprinus carpio). The project was divided into 6 sub-stages. During testing was the initial number of aditives (7) limited by stepwise selection for 2 preparations. Namely Bakont and AMX liquid, which were tested further on trout (filet with skin and scales) and carp (filets with skin without scales) chilled bulk and chilled packaged under vakuum. For trout was studied antimicrobial effect of dipping on eviscerated fish with the head with- or without gills. Treated trout fillets in bulk and vakuum-packed showed significantly less abundance of muscle mikroflora. In the case of carp fillets chilled bulk we can not say that the bath had influence on the CMP in meat. However, the combination of dipping and vakuum packaging was singnificantly different between the control and product Bakont. AMX liquid was not applied in this case in sufficient dose or in sufficient time to carp muscle. A positive finding is that the application of the aditives to the product "eviscerated trout with head" it does not matter, whether the gills are left in fish or not. However, in all cases the analysis of the presence of pathogens Escherichia coli, Salmonella spp. or Listeria monocytogenes were negative. From the results of sensory analysis can be concluded, that the substances contained in aditives are not reflected in the sensory properties of tested fish.

The attitudes of direct care workers providing residential social services to changes in the Act No. 108/2006 Coll. on Social Welfare Services.

The title of the thesis is: the attitudes of direct care workers providing residential social services to changes in the Act No. 108/2006 Coll. on Social Welfare Services. The thesis is focused on workers who have been working in residential social services for people with disabilities for five years. The reason for the determination of the number of years worked is to compare the existing state with the state before the introduction of standards. I found out in my preliminary research that 43% of employees were employed more than 5 years. In the theoretical part of the thesis, I deal with the definition and the importance of homes for the people with disabilities, their anchoring in the legislation and their representation in the Region of Vysočina. The next section describes quality standards in social welfare services, the organization and its culture with respect to ethical principles, staff training and staff motivation. The Region of Vysočina establishes nine facilities for the people with disabilities. The audits of social welfare services quality were carried out there in 2012. Their purpose was to determine how the rate of quality standards is implemented, but they can serve as a support for the further development of these organizations. The aim of this thesis is to formulate objective reasons for the negative attitudes of workers in relation to the implementation of quality standards in social welfare services. The thesis wants to find advantages or disadvantages of quality standards for users in terms of direct care workers and how quality standards contributed to the loss of authority of these workers. Four hypotheses were set for the thesis. The first hypothesis anticipates: direct care workers are not identified themselves with quality standards. The second hypothesis estimates: the protection of legal user interests expressed in Standard No. 2 is the most infringing. The third hypothesis was: demands for direct care workers increased substantially after the introduction of quality standards in social services. Finally, the last hypothesis was formulated as follows: employees prefer the education determined by the manager to their own choice. The research invalidated the assumptions of the first two hypotheses and the validity of the third and fourth hypothesis was confirmed. In the practical part, I analyze research results. I used the quantitative research to collect empirical data, it was used the interviewing as a method. The questionnaire was my applied technique. I sent it to the incriminated facilities in electronic form at the beginning of 2014. My research group was formed by social welfare service workers who have been working in selected residential facilities for the people with disabilities for five years. It consisted of 125 respondents, however, the number of returned questionnaires stopped at number 81 and the return is 64.8 %. The visits in these facilities and interviews with executives and methodologists preceded my interviewing. I used graphs and tables for clarity. The results of the research showed that workers did not assume a negative attitude to the standards as such, but rather to the facts that has an immediate impact on the performance of their work, mainly an increase in administration or lack of time for the user. But the introduction of standards gave clear rules for the work and contributed to the improvement of working conditions. This thesis can be used as a general information source for the founder of selected facilities that describes changed views of quality standards in facilities in the course of time. The thesis also can be served in the planning of educational needs in different facilities and it will be useful for social welfare service workers, it reminds them that human rights are the same for all people.

The impacts of economics crisis in road transport

This thesis is dedicated to the impact of the economic crisis in the transport sector in the Czech Republic, focusing on the road transport sector. This thesis is presented with the brief overview about the origin of the economic crises, what are its causes, impacts and possible prevention, which can prevent this situation. The theoretical part also describes not only the transport sector as whole, its development and current status but also gives further information about road transport. The practical part of this thesis is focused on analyzing macroeconomic indicators in the Czech Republic and determination if their development affected some indicators in the road transportation. The main result of this thesis will be interpreted on the basis of selected statistical methods. The second aim of this thesis is to analyze the impacts of the crisis on the selected company, which conducts in the road transport and propose to this company the options which would allow the impact of the economic crisis on its business activities.

Problems and perspectives of development aid: donors and developing countries

The aim of this thesis called 'Problems and perspectives of development aid: donors and developing countries' are main questions of development aid in general. Basic ideas of the whole concept are defined in the first chapter. The history of development aid and international theories' perspectives of development aid are mentioned here. The second chapter consists of classifications and characteristics of developing countries together with their capacities for integration. The donors are presented in the third chapter. The main part of the thesis is the fourth chapter in which the problems of development aid are analysed on the grounds of contemporary field literature. At the beginning of the fourth chapter the qualitative problems of development aid are analysed together with the donors' motivations for its distribution. The best possible form of development aid is discussed later on - whether it is better to provide developing countries with loans or non-repayable grants. Moreover, the coordination problems within the development aid are discussed as well as possible alternatives to development aid - such as trade. The thesis pays also attention to negative consequences of development aid. Possible solutions to the problems mentioned are sketched within each sub-chapter.

The effect of retirement on physical and mental health

By using panel data from SHARE this thesis shows, that retirement has a negative effect on indicators of physical and mental health. Results from using fixed effects models suggest that retirement leads to 0,85 points increase in chronic diseases, 0,3 points increase in difficulties associated with mobility and 0,07 points increase in body mass index. Also retirement increases the level of depression by 0,5 points. According to the results, the effect of retirement on memory is also negative.

The scientific and ordinary public attitute fowards to the home violence

Abstract This Bachelor{\crq}s thesis deals, both theoretically and practically, with the attitudes of the professional and non-professional public to domestic violence. Violence in its various forms has been deep-rooted in human behaviour from time immemorial, and, in my opinion, it is unrealistic to think that it may be eliminated or at least suppressed at its beginning. What may be dealt with, however, are attitudes of society towards violence and its originators. The victim{\crq}s attitude is derived from the attitude of the state and the professional and non-professional public to this matter. The theoretical part focuses on defining the term of domestic violence and its specific aspects and forms. The readers become acquainted with society{\crq}s different views of men, women and children in a brief historical discourse. This thesis also sums up the characteristics of the victim and the culprit of domestic violence, and it briefly informs about the development and the present legislative state in the Czech Republic. The final chapters of this part deal with the definition, components and measuring of attitudes. The objective of the thesis was surveying the real situation of the professional and non-professional public{\crq}s attitudes. Before I started my research, I set up two hypotheses for each of the groups questioned. The first hypothesis confirms that the non-professional public is not sufficiently aware of domestic violence and possibilities of help provided to victims. The second hypothesis confirms that the non-professional public perceives domestic violence as a negative phenomenon in society, and are ready to participate in its detection. I consider the fact that the non-professional public are not able to distinguish domestic violence from ``hard disputes{\crq}q, as results from the first hypothesis, as the most serious obstacle in the way non-professional public detect this criminal offence. The third hypothesis confirms that more than 70 per cent of the respondents from among the professional public consider domestic violence as a problem concerning the entire society. The fourth hypothesis confirming that the prevailing majority of the respondents from among the professional public regard the currently valid legal state as sufficient, was refuted. To conduct the survey I used the quantitative method. The data were obtained from two sets of population by means of two types of anonymous questionnaires. The set of respondents of the non-professional public numbered 208. The research set of the professional public consisted of 53 respondents. The sets were not compared with each other. The objective of the thesis was fulfilled. I view the main contribution of my thesis in pointing at problematic spheres in the society{\crq}s awareness and attitudes, and I suggested possible solutions of the problem as well as starting points from this sphere in the future. The results of my thesis could be used as a feedback for the professional and interested public.

The governing bodies of a cooperative

This diploma thesis deals with cooperatives and closely focuses on their bodies. Czech legal order gives only superficial legislation which causes many questions and imperfections to arise. The aim of this thesis is to find solutions to these problems and create an ideal model of cooperative. Following that, the author bases his thoughts on the legal doctrine and Czech court jurisdiction. The introductory part focuses on general questions, i.e. history of cooperatives, legislation and legal characteristics of cooperatives. The author refers to the negative impact of the Communistic Party of Czechoslovakia on cooperativeness between years 1948 - 1989. Such impacts are still present in nowadays legislation. Another imperfections are seen in the starkness and fragmentation of the legislation itself. All these imperfections may be removed by the future law about business cooperatives. The main body of the thesis follows as this describes the cooperative body legislation. Current legislation brings three obligatory bodies - assembly, board and control committee. Next to these, every cooperative may establish optional bodies. The chapter on assembly deals with its status and scope. The employee performance evaluation is one of the key activities in the current human resources management. It assists organization with valuable information, reports regarding work performance and a level of employee capability. Through such evaluation, the employees receive a feedback about their level of performance. This feedback helps to uncover their strength and areas of improvement as well perception by the organization about their efforts to meet the company goals. Therefore the work performance evaluation is fundamental for the organization as well as the employee. Despite the developing growth in the entrepreneur area, majority of the workers are still in a position of an employee. That is why we should all learn how to accept such principles of evaluation as well as to put them into practice. I have decided to elect this topic as basis for my thesis as I strongly believe that despite the frequent negative connotation, the employee evaluation contributes to the individual employee development therefore to the development of the whole company. Michel Debré and Europe. Thinking and Acting for a French European policy (1943-1962)

A b st r a c t This study deals with ideas and activities of the French politician Michel Debré in the area of the European integration. Analyzing the evolution of Debre's stance in a period of almost twenty years (1943-1962), the study aims to show that Debré was neither a pure "French nationalist" following obediently the wishes of General de Gaulle, neither a man who denied his own projects after a sudden U-turn in his opinion. We rather argue that Debré had remained true to three basic axes of his action since the Second World War: fidelity to General de Gaulle, readiness to reform French institutions together with a wish to assure to his country a privileged position in the system of international relations and, finally, vision of a huge community of countries bordering the Atlantic Ocean. In the late 1940's, Debré joined the European Movement and became one of the leading figures of its French branch. Promoting a union of European states, Debré was ready to accept a concession of some national prerogatives to "supra political" institutions but only if there had been a supreme European political authority composed of democratically elected representatives.
