Representation fiber in the nutrition of children preschool and school age.

The topic of this diploma thesis is fiber in the nutrition of children preschool and school age. The thesis is designed for two parts. The theoretical parts describe various fibers and its division, chemical properties, functions and benefits for the human body. Another piece of legislation is described here, which is used in school meals. The specific sections evaluate the proportion of fiber in the nutrition of preschool and school age. the calculation was determined from consumer baskets from individual primary and nursery schools and were supplemented with information on the fiber content in individual commodities of the Danish website frida.fooddata.dk. The results show that the fiber content in the nutrition of preschool and school children is sufficient and the proportion of fiber in the diet has the possibility of a downward trend in fiber content. In primary schools, we can see a declining tendency of amount fiber in the diet. The average of fiber amount is 64.7%. Kindergarten does not express a significant year-on-year, it accepts the representation of fiber in nutrition and spends less than at school and at 32.2% of recommended daily fiber amount, means 2.0g.
Celiac disease and issues of kid's eating habits in school canteens

This thesis is focused on catering for pupils with celiac disease in school canteens. The first part, the theoretical one, deals with the disease itself; it gives basic information about the disease, its history, main symptoms, anatomy of healthy digestive system, and the most common health problems occurring when suffering from celiac disease. At the end of the theoretical part diagnosis of the disease is described as well as suitable and unsuitable diet food for celiac and food legislation. The practical part is a survey focused on catering for pupils with celiac disease at selected elementary schools. The survey was conducted in two regions in Valašské Meziříčí and in Prague. In the final part of my thesis special gluten-free menus for schools are suggested. The pedagogical outcome of my thesis is a lecture on celiac disease which can be held at elementary school s to help pupils find out basic information about this disease.
Communication in the management of school cafeteria

TITLE: Communication in the management of school cafeteria AUTHOR: Drahomíra Dušková DEPARTMENT: School management center SUPERVISOR: Mgr. Jiří Trunda ABSTRACT: Final bachelor thesis deals with internal communications in the school cafeterias and focuses on manager's communication. Survey was sent out to a total of 250 school cafeterias, from the total number of 8154 school catering facilities across the Czech Republic. Questionnaires were completed by 116 managers (directors) of school cafeterias and 259 employees. The thesis reports on the communication skills. On one side, from the perspective of managers themselves, determining their views on how they apply communication skills. And on the other side, from the perspective of employees in cafeterias, as they perceive and understand communication. Analysis of the results revealed some differing views on issues of communication between the school cafeteria managers and their employees. Some questions were perceived as critical for both sides, in other, sides answered in positive consensus in favor of successful communication skills. Further the thesis has determined that 61% of school cafeteria managers have no training or education in management.
