Assessment of the variety of meals based on the menus of school canteens at selected primary schools

The diploma thesis was solved in two selected school canteens in the towns of České Budějovice and Kaplice. The aim of the diploma thesis was to evaluate and compare the diversity of meals, especially according to the Nutritional Recommendations of the Ministry of Health of the Czech Republic (2015) and the evaluation of the consumer basket, which is governed by valid Decree No. 210/2017 Coll., Amending Decree No. 107/2005 Coll. , on school meals. This issue was followed by an evaluation of the frequency of inclusion of seasonal foods or meals. Research has shown that both school canteens have insufficient representation of vegetable and cereal soups, meatless main dishes and fresh vegetables. On the contrary, we can evaluate very positively the frequency of classification of fish, legumes, legume soups and heat-treated vegetables. The consumer basket did not always, but in most cases corresponded to the evaluation of diversity. In both schools there was a problem with low filling of sugars and legumes. In addition, at the second school, there was a persistent shortage of milk and sometimes low levels of fish commodity. The third part of this work - the inclusion of seasonal foods or meals was done very well by both schools. As can be seen from the above, school canteen menus can still improve. The classification of healthy and tasty meals is not always easy, but children's diets are a key factor that affects them in childhood and adulthood, both from a health perspective and from the point of view of acquiring eating habits.
Assessment of energetic and nutritional intake from school canteen lunches at selected primary schools

The school environment and especially school canteens play an important role in guiding children to a healthy diet and lifestyle. The aim of the diploma thesis was to determine the intake of energy, main nutrients and micronutrients from lunches in selected school canteens and according to Decree No. 272/2021 Coll. on school meals to evaluate the filling of the consumer basket. The results were compared against the recommendations in DACH (2019). The results show that the most common problem was the higher protein intake than stated in the corrected standard. Another finding was non-compliance with vitamin intake in terms of either their deficiency or excess intake at selected lunches. In the evaluation of the consumer basket, the most common problem was with loose sugars, milk and dairy products. The work also took into account the seasonality of food classification thanks to the monitoring of menus in selected months, for a period of one year.

The diploma thesis deals with the issue and analysis of the quality of catering in the school canteen of kindergartens. The topic of the diploma thesis is to find out whether the studied commodities (fiber, omega 3 fatty acids, antioxidants) correspond to the standards and legislation that apply to school canteens. The work is divided into theoretical and practical part. The theoretical part describes the characteristics of preschool children and their development. This section describes the importance of nutrition in the preschool period with a focus on reference and nutritional values, consumer basket, financial standards and legislation that school canteens must follow. The practical part analyses the fulfilment of the consumer basket in kindergartens. This section discusses in detail how the selected commodities are represented in the consumer basket. The work is focused on the proportion of fiber, omega 3 fatty acids and antioxidants, especially the representation of vegetables, fruits, legumes, potatoes and fish serving. According to the results, it is clear that school canteens fill the consumer basket at the lower end of the tolerance. Subsequently appropriate recommendations were proposed to improve the identified shortcomings, which mainly concern the increase in the consumption of fruit, vegetables and potatoes. Surprising results have been found for legumes and fish commodities. Their consumption reached more than 100 percent of the standard set by the consumer basket.
Analysis of consumption and species representation of vegetables as sources of alimentary antioxidants in the system of school meals.

The topic of the submitted diploma thesis is the Analysis of consumption and species representation of vegetables as a source of alimentary antioxidants in the primary school pupils´ catering system of pupils and a proposal of a possibility of the limit indicators´ improvement. The task of this diploma thesis was to find out whether school canteens manage to successfully meet the standard of the consumer basket and nutritional standards set for school meals in the commodity of vegetables and to find out which types of vegetables are used the most in school canteens. The thesis contains two parts. The theoretical part describes the topics related to the school catering system through the history to the present days, school catering legislation, the nutritional values of catering in our country and brief characteristics of vegetables. The chapter Consumer Basket gets us acquainted with: nutritional standards for school catering, financial limits for the food purchase, compliance with the Consumer Basket nutritional recommendations and consumer basket´s compilation methods. The last chapter of the theoretical part deals with various specifics of vegetables and the content of different kinds of vitamins and minerals. The practical part evaluates the results filling the consumer basket in the commodity of vegetables according to the standard focusing on school catering. The results examine the average vegetable content within one lunch. The results also review the actual and average daily consumption of vegetables.
Analysis of the normative selected commodities of the consumer basket in the school catering systems for primary school pupils and a proposal for the possibility of improving the limit indicators

The topic of this diploma thesis is called Analysis of the fulfillment of the norm of selected commodities of the consumer basket in the school catering system for primary school pupils and a proposal for the possibility of improving the limit indicators. The task of this diploma thesis is to find out whether school canteens can successfully meet the standard of the consumer basket and nutritional standards for school meals in the commodity of legumes and which legumes the school canteen use the most. The work is divided into two parts. The theoretical part describes topics related to the school catering system from history to the present, as well as school catering legislation. The chapter consumer basket acquaints us with nutritional standards for school meals, financial limits for the purchase of food, fulfillment of the consumer basket with nutritional recommendations and with methods for compiling a consumer basket. The last chapter of the theoretical part deals with nutrition, healthy nutrition and its principles, the pyramid of nutrition for children and the drinking regime. The practical part evaluates the results, filling the consumer basket in the commodity of legumes according to the standard on school meals. The results of the average fiber content in legumes in one lunch, which were obtained from data in the consumer basket, are also evaluated here. The results evaluate the actual and average daily consumption of legumes. In the last chapter we follow which legumes the school canteen uses the most for the preparation of meals, we obtained these data from the dispensers provided by the canteens.
Representation of sources of omega-3 fatty acids in the school canteen menu concept and proposing options for improving utility basket indicators

The topic of this diploma thesis is called Representation of sources of omega-3 fatty acids in the school canteen menu concept and proposing options for improving utility basket indicators. The task of the diploma thesis is to find out whether school canteens successfully meet the standard of the consumer basket and nutritional standards for school meals in the fish commodity. The work is divided into two parts. The theoretical part describes topics related to omega-3 fatty acids and their sources, school catering legislation and the last chapter is a consumer basket, which was obtained from scientific and professional publications, which are searched in domestic and foreign databases of scientific and professional literature. The practical part contains the results of filling the consumer basket in fish commodity at schools in the South Bohemian Region of the Czech Republic, which then compares the results with the recommendations of the Decree of the Ministry of Education of the Czech Republic nr. 107/2005. The diploma thesis deals with alternative education and its view on the nutrition and eating habits of pupils nowadays. The work aims to find out, how alternative schools view the quality and use of the food basket within eating and nutrition of children in comparison with the traditional school. My interest was to find out the opinion of parents, how they view their children's eating in alternative schools and whether they attach great emphasis to it. The work is divided into theoretical and practical part. The theoretical part is focused on the comparison of alternative and traditional education with emphasis on the development, nutrition and eating of children. The practical part includes the results of a qualitative research survey, which was carried out with the help of analysis of available sources and subsequent study of interviews.
Posouzení jídelních lístků školních jídelen na vybraných základních školách z hlediska pestrosti stravování a dodržování spotřebního koše

Research for this thesis took place in two selected primary school canteens in Humpolec during the school year 2018/2019. The aim of this thesis was to compare the variety of diet and filling of the consumer basket between two primary school canteens. Further aim was the evaluation of the nutritional value of the dishes servedin canteens and comparison of the identified values with the DACH standard (2011) for older pupils. From nutritional point of view there was found out the lack of vegetable and legume soups in both canteens. Furthermore, there was confirmed the general trend towards minimal frequency of fish dishes and surplus of meat dishes, cold cuts and dumplings. The amount of fruit and vegetable was also not fully satisfactory. The evaluation of the consumer basket filling in both canteens showed insufficient use of fish meat and milk and uneven speling of fruit and potatoes. On the contrary during the whole school year (except April 2019 in canteen A) was served enough legumes. The fact that there was served enough meat, free fats, free sugars, dairy products and vegetable is also a plus. The energy intake of school lunches in both canteens was around 80-90% of the reference income for both boys and girl, category older pupil. The amount of proteins contained in dishes was very excessive in both cases, fat intake was also superfluous in the school cafeteria A for both genders, in cafeteria B was the value of fatslightly excessive for girls an don standard level forboys. The carbohydrates were held with in standard except the amount measuredin canteen A in April 2019 which was slightly above the required value. The micronutrients contained in served dishes wereon standard level or abovethe reference value. The only nutrient which intake would be appropriate to increase in both canteens was calcium.
Vyhodnocení pestrosti stravování dětí v mateřských školkách

This diploma thesis is speaking about assessment of dietary diversity in two selected kindergartens, namely in a regional town (school A) and in a small village (school B). This issue was followed by evaluation of the filling of the consumer basket and determination of energy intake and nutrients from meals served to children in kindergartens. A suitable methodology for research was data collection and their subsequent analysis, there has been processed and evaluated the obtained data (menus) from the two kindergartens. Final outputs were compared with reference values for nutrient intake according to DACH (2011). Research in assessing the variety of menus has shown, that in both kindergartens there is an excessive serving of pork and the inclusion of sausages. On the contrary, the frequency of fresh vegetables is very insufficient. In kindergarten A, it is necessary to increase the frequency of serving vegetable soups. At kindergarten B was found insufficient representation of meatless dishes and frequent inclusion of sweet foods. Evaluation of the consumer basket recorded shortcomings in the filling of commodities of milk, dairy products and free sugars. The nursery of pulses was not fulfilled at kindergarten B. From the evaluation of the nutritional composition of the monitored menus in both institutions revealed a high above-limit protein saturation, which corresponds to literature sources and findings made by hygienic stations. As positive thing is revealed that the intake of calcium and iron in preschool children was ensured in optimal amounts. However, a lower intake of vitamin A was recorded in kindergarten A. In conclusion, it can be said that a healthy lifestyle is getting to the fore, and therefore kindergartens are trying to keep up with this current trend. From this thesis investigation its clear, that shortcomings still exist in this area and that this issue must not be underestimated, as it can have an impact on a child's future eating habits, which also affect a person's overall health.
Analysis of the quality of the food in the school canteen and verifying the possibilities of improving selected indicators costumer basket.

The diploma thesis deals with current problems in the field of school feeding in a selected school canteen. The main aim is to map out the situation in terms of the composition of the consumer basket in the school canteen and determine possible improvement in the individual components of the consumer basket. School feeding is a part of the educational process and follows up on the fulfilment of the school educational program. It is also an environment for non-formal education in terms of strengthening good eating habits and social interaction during eating. Students acquire social and psychological competencies for life when participating in school feeding. They draw on dietary important practical knowledge in the field of nutrition and also learn social behaviour in eating in a non-violent way. By obtaining the consumer basket of the given school canteen, possible deficiencies associated with better filling were surveyed over three years. The findings that show problems with some components of the consumer basket, such as pulses or quality fresh vegetables, are the output of the work. The results of the survey revealed that the cause of this problem is insufficient financial resources for the purchase of better quality, mainly fresh, food e.g. vegetables. The aim of the diploma thesis was to process the obtained data of a specific school canteen in Central Bohemia and analyze the individual components of the consumer basket in the years (2016 - 2018) furthermore, a comparison of the consumption of raw materials in the consumer basket with the consumption of the given raw material per person within the household consumption monitored by Czech Statistical Office. The theoretical part, in addition to information on the nutritional requirements for school children, describes the current official system of dietary control, based on the so-called consumer basket, which is based on established weight standards of individual food for appropriate age groups of children. The research group consisted of 773 pupils in the age range 6 - 15 years from a primary school in the Central Bohemian Region. The obtained data were processed graphically using basic statistical values.
