Antibakteriální vlastnosti povrchových úprav pracovních kuchyňských desek

The diploma thesis deals with antibacterial properties of kitchen worktops surface finishes. The thesis compares the antibacterial, physical-mechanical, utility and appearance properties of various surface treatments on solid wood of oak, acacia and pear wood. The research was carried out on alkydurethane and water-borne varnish. Escherichia coli and Staphylococcus aureus were used for the assesment of antibacterial activity. The thesis describes the risks associated with microorganisms and kitchen environment. Furthermore, the requirements for surface finishes of kitchen worktops were analyzed.

The bachelor thesis deals with the evaluation of food quality and safety systems in food processing company FRITAGRO Nižkov, s.r.o. focusing on chosen products. Current systems ensuring food safety were analysed mainly by elaborated description of critical control points. The bachelor thesis puts emphasis as well on benefits gained by initiating ISO 22000 system and brings scenarios which could improve food safety across the food chain.
Elektrochemický biosensor pro deteci patogenních bakterií v potravinách

The aim of the theoretical part of this work is to summarize vital pathogenic bacteria in the foodstuff, describe the essential characteristics of the chosen bacteria, the health consequences and the most-often used treatment. Next topic included in the theoretical part is treatise about not only the classical cultivational but also the modern technical methods used to detect bacteria. The last chapter discusses the essential electrochemical methods used in the practical experiment. The practical part is focused on the verification of the electrochemical biosensor functionality which is used for the detection of pathogenic bacteria. Special attention is paid to the cleaning of the gold electrodes, application of the thin thiol layer, activation of the surface, immobilization of the antibodies and bacteria and also to the electroche-mical-quantitative determination of the bacteria concentration. Considering that the bio-sensor construction represents a quite complicated experiment, it was necessary to em-phasize all the partial steps of the biosensor's construction so that it was possible to veri-fy the correctness of the procedure. The last step of the practical part is the analysis and interpretation of the results.

The topic of my bachelor thesis is focused on using dietary fibre in meat products, mainly from technological and health aspect. The first part deals with the theory of the meat products, their classification into groups according by the legislation and inspection authorities that monitor the food harmlessness. The thesis also analyses the additives being added to food during production, especially focuses on dietary fibre – its use in technology of the meat production, the influence on human health, and specifies certain kinds of fibre that can be used in the meat processing. In the final part of the literature search, there is also analysed the production technology and specified sensory evaluation. In the practical part, the thesis focuses on the evaluation of the Myslivecká klobása with dietary fibre and without it, which was made in Institute of food technology in Mendel university in Brno. I was present when the sausages were made. After that we made sensory evaluation of products with dietary fibre and without it.
Analysis of the link between climate change and food insecurity among small holder farmers: a case study of Mount Darwin district, Zimbabwe

Climate change is envisaged to impact the lives of all people on earth in a tremendous fashion regardless of their place of stay, profession or personality. The vagaries of climate change are expected to throw their weight on water balance thereby leading to food insecurity among smallholder farmers in Zimbabwe especially those in Mount Darwin District, the case study of this research work. As such, previous development gains by most African countries are thought to be reversed in the face of climate-related ramifications. My diploma thesis is a culmination of a deeply felt desire to raise awareness on the already existing and potential future impacts of climate change among smallholder farmers in the district as mentioned before. As such, the first chapter provides a situational analysis of climate change and how it has affected agricultural production generally in Zimbabwe. Moving on, the second chapter attempts to review climate change related literature, detailing how greenhouse gases are emitted into the air, how they lead to global warming and subsequently to climate change and so on. Furthermore, the methods of research are interrogated in chapter 3 demonstrating sampling procedures and data collection methods whilst the analysis and interpretation of data is examined in chapter 4. Major findings, recommendations and conclusions of this work are dealt with in the last chapter. Finally, appendices 1 and 2 represent the research instruments that were employed in the form of questionnaires in the data collection processes.
Food security and land redistribution in Zimbabwe

The thesis seeks to assess the effects on Food security in Zimbabwe looking at the effects of land reform. Zimbabwe is agro-based economy, and with the prevailing world trends on food security coupled with periodic droughts and effects of climate change, it has seen a decline in the economy. It is on the basis of these causes of food insecurity we seek to assess the level of food insecurity in Zimbabwe focusing on the SDG goals 1 and 2 looking at the four pillars of food security (availability, accessibility, utilisation and stability and quality) by looking at the trends in agriculture production before and after land reform to date. The results show that with proper policies that encourage smallholder farmers to produce and skill transfers there can be a positive change in the economy and food security crisis in Zimbabwe. It also highlights the major role the government plays in improving the policies that deal with the agriculture sector.

This thesis deals with alimentary diseases in selected countries of Southeast Asia. The theoretical part of the thesis describes food safety and nutritional sufficiency, which is often related to individual alimentary diseases. They are divided according to the originators of the disease to viral, bacterial and parasitic. The ways of the most common transmission of the disease agent, their progression, prevalence and incidence in the three selected countries of Southeast Asia (Malaysia, Thailand and Myanmar) are described for the following diseases: rotavirus infections and hepatitis, cholera and typhoid, schistosomiasis and taeniasis. Important risk factors that significantly affect the occurrence of these foodborne diseases are defined in the thesis. The most serious foodborne diseases in Southeast Asia are typhoid fever, norovirus infections and hepatitis A. The most effective preventive measures are vaccination programs, improved personal and communal hygiene and access to safe water.
The impact of population growth on the socioeconomic development of Ghana

The impact of population growth on socio-economic development of a country is now recognized as a global issue of increasing importance and remains the root cause to the range of challenges to sustainable development. Growth in the population seems to be the biggest contributing factor to the projected increase in food needs. There are many factors or reasons that contribute to population growth in the world. The main aim of the study is to analyze the Impact of Population Growth on the Socio-Economic Development of the people of Ghana. Using secondary data and mixed method (qualitative and quantitative) of analysis, the study found out that population growth in general results in a high dependency burden, which in turn creates a low savings and investment situation. It has also resulted in forest degradation due to demand for agricultural lands. Migration and high fertility rate contribute to rapid population growth in Ghana. The study recommends that trends in migration and urbanization should be considered laying down strict measures to discourage illegal migration. Again, Infrastructure in rural areas need to be improved to discourage urbanization on the bases of lack of infrastructure and organize educational programs geared towards family planning and reproductive health.

The aim of this methodology was to describe a protocol for the rapid and reliable detection of microscopic fungi from the genusPenicillium and Aspergillus capable of producing mycotoxins ochratoxin A and citrinin in cereals, preferably prior to their production and accumulation, using polymerase chain reaction (PCR) and their use, e.g. for the evaluation of health and hygienic safety of plant products.

Systems for monitoring hygiene in practice - implementation of the HACCP system in the selected processing plant

System of HACCP (Hazard Analysis and Critical Control Points) is the main and unbroken system in the field of food safety. There is a duty for food producers in the Czech Republic to implement a system of critical control points into their business. It means to identify points (critical) in the process of production where can be the highest hazard for food safety, to monitor these points, to control and register data regularly. Production of safety food, protection of consumers, and also protection of a producer is the principle and result of proper and functional system of HACCP. Documents, an indivisible part of system of HACCP, were drafted for a selected company. Analysis of hazards was also done with the result of setting control points (CP) and two of critical control points (CCP) in a production step of cooling and packing.
