Diplomová práce pojednává o možnostech řízení procesu ochlazování pro redukování ztráty materiálu z proteinového gelu a hledá možnosti řízení textury konečného stavu proteinového gelu vlivem ochlazovacího procesu. Tato páce bude podkladem pro vypracování projektu a následnou realizaci ochlazovacího tunelu do výrobní linky proteinového gelu. This diploma thesis deals to possibilities lead chilling process with material loss of product and divine to possibilities lead texture final product with chilling process. This work will be base of project for realization chilling tunnel to flow line of proteinic gel.
