Mašková, Klára ; Gürtler,, Ivan (referee) ; Dulenčín, Juraj (advisor)
The diploma project handles the design of the synagogue and other buildings of the Jewish community in Jihlava. The project is formed as an architectural study. Apart from the synagogue, the proposed set of buildings also includes a kosher restaurant, which is characteized by a specific cooking convention, and the administration of a Jewish community with a lecture hall and a community library. The entire complex is complemented by underground parking and the necessary technical facilities. The area is located on the edge of the historical center of Jihlava and the character of the place is strongly determined by the presence of fortifications and fortification greenery. The concept is based on legible urbanism, which copies the line of fortification. Between the proposed building complex and the walls of fortification the park is preserved and valorises the urban potential of the site. The functions are divided into separate objects. A uniform architectural language of simple cubic volumes was chosen for all buildings. The principles of the construction and inner disposition of individual buildings vary according to their characteristics.
Fortification of bakery products with protein isolate from wheat bran
Bidmonová, Karolína ; Vítová, Eva (referee) ; Pořízka, Jaromír (advisor)
Proteins, as the major structural component of all cells and tissues, along with fats and carbohydrates, are a key macronutrient in human nutrition. An insufficient protein intake in the diet can lead to health problems and increasing protein malnutrition. Food fortification plays an important role in eliminating this protein deficiency. Wheat products, as a widely consumed food, seem to be a suitable commodity for protein fortification. Wheat bran was selected as a suitable source of protein due to its availability, protein content and relative simply method of a protein isolation. In the experimental part, the protein was extracted from wheat bran and used to prepare the mixtures. The mixture contained T530 flour and the 5%, 10% and 15% addition of the wheat bran protein isolate. From these mixtures, doughs were prepared and were subjected to chemical and rheological analysis. Finally, wheat baguettes with the addition of wheat bran protein isolate were made. The texture and taste properties of the baked products were verified by sensory analysis. The mixtures of flour and whey protein and a sample of unriched flour were also analysed to compare the results. Applied tests have shown that the addition of protein influences not only nutritional and chemical but also rheological properties. The addition of wheat bran protein isolate had a negative impact on the taste properties of the baguette Higher addition of BPI caused the increase of the bitterness of products. Taste optimization could be a topic for future study.
New synagogue Jihlava
Bednařík, Adam ; Baranyai, René (referee) ; Dulenčín, Juraj (advisor)
The architectural study deals with the creation of a new synagogue in Jihlava, in the place of the original burned Jihlava synagogue from 1931 by German Nazis. The proposal works with the idea of restoring burned foundations, the walling wall and the incorporation of adjacent fortifications. One of the main ideas of the proposal is to work with contrast - closeness x openness. The principles of the project are based on the history of Jewish culture, its symbolism and the simplicity of urban and dispositional solutions. The proposal also deals with spaces for the Jewish community, kosher restaurant and mikveh. The Jewish Community Building provides administrative, teaching, community and museum space. At the same time, the project aims to create new links to the original design of the G.M Park and the public space where it would gain information on Judaism, the way of life of the Jewish community and their history.

Representations of siege warfare in journals of British defenders of Bergen-op-zoom in 1747, adheres at specific genre of historical anthropology of war and military. It poses questions regarding ana-lysis of contemporary culture of war and its individual variables, their interdependence and changing configuration during the siege of Bergen-op-zoom in 1747, during culmination point of War of Austrian Succession. Meaning of this text consists of an effort to discover alternative way of treating historical sources and to depart traditional conservative methods of analyzing the war conflict using national or confessional military stereotypes, essential features of key actors or theoretical normative of military science. The text comes to conclusion that most irregular and dramatic character of the siege of Bergen-op-zoom was primarily caused by profound misunderstanding between defenders and attackers regarding culture of war, especially acceptable definition of military honour and of legitimate combat techniques.
