The aim of this bachelor thesis is to provide an overview of the topic Food for special nutrition, food for people with gluten intolerance. In the thesis, I focus on the labeling of gluten-free food and its nutritional value in comparison with food containing gluten. Among the gluten-free food we count those which contain more than 10 mg of gliadin per 100 g dry weight. The composition and labeling of gluten-free food is regulated by Commission Regulation (EC) 41/2009. Further, I focus on the origin of celiac disease, its development, symptoms and treatment. Celiac disease is caused by toxic effect of gluten particles, alpha gliadin. The body forms antibodies that affect enterocytes that are present in the lining of the small intestine.
Issues of atopic dermatitis in context of nutrition

The topic of my bachelor's thesis is "Issues of atopic dermatitis in context of nutrition." Atopic dermatitis is a type of skin inflammation in moist areas (back of the knee, inner elbow, groin). Skin health is affected by factors including the weather, textile and diet. Data were gathered using a qualitative research and snowball sampling. A survey was conducted among nine respondents, each providing information on the food they ate for a week. The goal was to map atopic dermatitis in the context of nutrition. The practical part of the thesis focused on what foods seem to be the most problematic for respondents. The survey showed these include citrus fruit, sweets, highly processed foods and especially alcohol. Respondents said that wine was the most problematic among alcoholic beverages. A few respondents mentioned nuts, soya and dairy. Seasons also have an impact on the atopic dermatitis incidence, with winter posing the biggest problem and summer following. A link between atopic dermatitis and the weather has not been properly studied and cannot be confirmed. The food analysis was recorded in the Nutriservis app. Data were entered into an Excel table that includes energy and macronutrient values of individual meals. The analysis shows that most respondents eat bread/rolls with ham or cheese, or cereal for breakfast. Snacks are similar but smaller than breakfasts. Lunches and dinners are often home-made meals consisting of good polysaccharides (rice, pasta, potatoes), meat (mostly chicken) and vegetables. The analysis reveals often unbalanced energy intake over the week, mostly because of alcohol consumption. Most respondents eat enough fruit and vegetables.
Pupils' and parents' attitudes towards allergy and food intolerance

The aim of the work is both to process a search based on the available literature, as well as to determine the level of knowledge and attitudes of students and parents in the form of a questionnaire, the attitudes of teachers and doctors through structured interviews. Furthermore, the aim of the work is to answer the following research questions. 1. Do the level of knowledge and attitudes of pupils and their parents differ? 2. Is school teaching the most important source of information on allergies and food intolerances?
Information Awarness and Experience of Common People with Food Allergy

The bachelor thesis is focused on the problems of the food allergies. The aim was to discover how much the population is informed in this field, if the population has experienced the food allergies, having found the symptoms present on themselves or their friends, family. And finally the awareness of these allergies in a family taking care of an allergic person is studied. In the theoretical part the definitions of the food allergies and similar reactions are explained. It is followed by anatomical and physiological descriptions of digestive and immune systems which are closely related to the food allergy. The causes and symptoms of the food allergies, diagnostics, treatment and prevention are integral to the theoretical part. The importance of probiotics and prebiotics which differs in scientists' opinions and in results of scientific studies is also studied. In the end of this chapter a new antigen and the education of the general public are mentioned. In the empirical part the characteristics of research assignment and methods of the research are described. I chose a questionnaire as a method for data collection. Occurrence and Prevention of Asthma in Youth Division Cross-country Skiers

Title: Occurrence and Prevention of Asthma in Youth Division Cross-country Skiers Objectives: The aim of this thesis is to determine the incidence of asthma in youth division cross-country skiers and its prevention. Methods: This thesis will comprise the method of survey and content analysis of documents. Hypotheses: No.1 Assume that asthma will have lower prevalence in youth division cross- country skiers than in adult cross-country skiers. No.2 Assume that the majority of the surveyed cross-country skiing coaches met with asthmatic symptoms in their athletes. Results: We found that 12% of youth division athletes suffer from asthma and 24% from allergies. Alergens in the Teaching of Natural Science, Biology and Chemistry

The theme of the diploma thesis is allergens in the teaching of natural science, biology and chemistry. The subject and its aim is to find out the presence of allergens in selected classes of natural sciences (natural sciences, biology, chemistry) as well as the level of awareness of problems of allergies and allergens from teachers and pupils of elementary schools and grammar schools and to compare whether teachers of selected subjects take into account Creating climate climate for allergic pupils. The thesis consists of theoretical and practical part. The first part summarizes all theoretical knowledge, including the theme of allergies and allergens. It deals with the concept of allergy from the historical point of view, it characterizes the general importance of allergies and its connection with the immune system, it presents individual risk factors influencing the origin and development of allergic disease. A large part of the theoretical part describes allergic diseases including their manifestations, diagnosis and follow-up treatment, and also the individual types of allergens that are classified according to their effects on the organism. Comparison of cytokine production by leukocytes from newborns of healthy and allergic mothers

The increasing incidence of children suffering from allergic diseases could be caused by sensitization of immature immune system during the intrauterine development. Several important scientific papers have demonstrated the ability of cord blood cells to respond by elevated proliferation activity after stimulation by common allergens. Following these findings, present study follows the production of cytokines which play a role in the pro- and anti-allergenic tuning of the immune system. Umbilical cord blood cells were stimulated with polyclonal activators (phytohaemagglutinin) and common allergens (ovalbumin, timothy grass, birch, mite). Subsequently, cytokine production was monitored using selected methods that reflect different stages of cell activation - at the level of mRNA by quantitative real time PCR (qRT-PCR), by flow cytometry detection of the presence of intracellular cytokines in different cell subpopulations and by ELISA measurement of cytokines in CBMC culture supernatants. The results obtained point to a very weak ability of these common allergens (timothy grass, birch, mite, ovalbumin) to stimulate CBMC to produce cytokines observed by all of these methodological procedures. Immunologic Characteristics of Cord Blood in Children with Increased Risk of Allergy Development Preventive Use of Probiotics

Allergy is one of the most common diseases. Identification of early prognostic markers pointing to an increased risk of allergy development is therefore of increasing importance. Cord blood represents an easily attainable clinical material for searching for prognostic markers signalizing future allergy development. Proportions of Th1 cytokines, Th2 cytokines and regulatory cytokines were tested in cord blood of children of allergic mothers (children in relatively high risk of allergy development) in comparison with cord blood of children of healthy mothers (low risk children). Also the activities of lymphocytes, dendritic cells (DC) and regulatory cells (Tregs) were compared in children of healthy and allergic mothers. The generally increased activity of both in vitro stimulated and non-stimulated mononuclear cord blood leukocytes was proved in children of allergic mothers in comparison with low risk children. The increased activity of DC of high risk children was detectable only after polyclonal stimulation. Significantly less pronounced functional properties of cord blood Tregs were found in children of allergic mothers when compared with children of healthy mothers.
