Characterization of some super-foods as components of smoothie drinks

This bachelor thesis deals with properties of selected fruits and seeds of superfoods, the introduction of their biologically active substances and comparison of their nutritional properties. The theoretical part focuses on characterizing the fruit itself (pineapple, banana, blueberry, kiwi, raspberry and orange) and seeds (chia seeds, poppy seeds and almonds). It is focused on characterization of bioactive substances contained in them, such as polyphenols, flavonoids, antioxidant activity, vitamin C, vitamin E and fatty acids. Further, used methods are described. In the experimental part, the content of the antioxidant activity and biological effects in selected fruits and seeds was measured and concentrations was calculated per 1 g of dry matter. Finally, a sensory analysis consisting of eighteen fruit and seed combinations is introduced. The aim of the thesis was to find out which of tested combinations are nutritionally high and, simultaneously, acceptable for consumer.
Ginger and broccoli as superfoods

The aim of the Bachelor's thesis is to investigate the infamous "superfoods" and to find out how nutrition therapists feel about this group of foods. The thesis is divided into a theoretical and a practical part. The theoretical part is based on scientific articles and studies and examines the characteristics of two specific representatives of "superfoods": ginger and broccoli. Each of these foods is looked at primarily in terms of chemical composition, the content of the most important substances and their potential effects on human health. The practical part is aimed at nutritionists and other food therapists. It took the form of a survey to find out whether professionals are familiar with 'superfoods' and their selected representatives, whether they recommend this group of foods in their practice and what their opinion of it is. The results showed that the vast majority of nutritionists consider ginger and broccoli to be superfoods and recommend both for consumption in their practice, but less than half recommend superfoods in general. Superfoods and their nutritional evaluation

Superfoods have become a huge trend in the fields of wellness and nutrition, but their nutritional value is often overestimated. The information surrounding this type of food is often inaccurate and misleading, however that does not mean that people can not benefit from adding superfoods to their diets - they can provide not only nutritional value, but the sensory one as well. The aim of this bachelor thesis was to examine what the sample of participants thinks of superfoods: whether they are a part of their diet, why, if they perceive any health risks, how much they know about this type of foods and how they asses their price adequacy. The result was that the participants have the knowledge of the the term "superfoods" and they eat superfoods mostly in order to enrich their diet with additional nutrients and because these suit their taste preferences. Most participants do not consider superfoods risky in any way. They are generally not sufficiently educated when it comes to specific superfoods and they find them overpriced, but worth the money (because of perceived health benefits). Comparison of Czech and world superfoods

This bachelor thesis focuses on the topic of superfoods and aims to discover how our crops differ from those from abroad. The work consists of a theoretical and practical part. In the theoretical part of my thesis, I firstly analyze five most well known foreign (avocado, soy, goji, chia seeds and quinoa) and Czech (various seeds, poppy seeds, walnuts, blueberries and vegetable juices) superfoods. Then I compare them on four levels- a nutritional, economical, ecological and ethical one. In the practical part I asked several questions related to the problematics of superfoods and with the use of sent out questionnaires investigated whether people know superfoods, what is their opinion on them, if they buy them and whether they think about their origin and deeper problematics of the import of exotic crops. I discovered that more than 75 percent of those questioned are aware of superfoods. Whole 40 percent of people were somewhat sceptical of these foods and only 18,5 percent expressed full trust in them. The aim of this thesis is to define the contribution of functional foods for human health and formulate an effective introduction procedure of functional foods for the regional food market using marketing mix tools. The practical part is done in cooperation with ALIMPEK al. s r. o. The company is trying to introduce a new product to the customers (bread, which contains modified flax) and present its health benefits. Questionnaire survey confirmed, that the consumers are aware of the impact that food has on human health and are inquiring its specific effects. The source of the information that affects the customers mostly is the internet (unprofessional publications) and etiquette of the product. Consumers are aware that flaxseeds are beneficial to health, but they could not list the specific effects. It was further found that consumers do not know the composition of the bread they buy. Based on the data and information gathered, possible solutions that could lead to increased consumption of selected functional foods were proposed.
Superfoods - why choose them in nutrition?

This thesis summarize information about Salvia hispanica, known as Chia and Lycium barbarum/chinense, known as Goji, which are plants that provide seeds and fruits used as superfoods. The theoretical part of the thesis is divided into a general description, content substances, health effects, history of use of these plants and an overview of studies with their use. Studies are focused on the study of antioxidant effects, anti-cancer effects, the influence of use superfoods on metabolism and diseases, and studies on the use of these superfoods in common foods. The practical part of the thesis focused on knowledge into superfoods among the population and the rate of their use. The results show that knowledge about superfoods, including chia and Goji, is good, as well as the use of superfoods in the population. Chia and Goji are currently the most widely used superfoods. Less than a third of respondents observe the positive effects of using superfoods. This thesis presents information to potential consumers why they should include superfoods in the diet.
The effect of the clame "superfoods" in consumer behaviour

The master thesis is concerned with the effect of the clame superfood and its impact in consumer behaviour. The aim of this thesis is to find out how consumers perceive the phenomenon of superfoods and how this claim effect their consumer behaviour. The theoretical part of the thesis defines and explains the terminology related to the key term superfoods such as functional foods, superfruits and organic foods. Subsequently the thesis edentifies the rules of a food labeling with the emphasis on health and nutrition-related claims. The thesis then examines the recent development of the superfoods market with its trends either from the local and the global point of view. The theoretical part is ended by the analysis of the methodology The Six Elements of Superfruits Success, which defines the six elements leading to a successful business strategy in a field of superfoods industry. The empirical part of the thesis shows the survey results of the effect of the clame superfoods and organic foods on products and its impact in consumer behaviour in the Czech Republic. The thesis then deals with the case study Jeřáb (a product containing a superfood). The thesis draws up a draft proposal for a new communication strategy of Jeřáb with the emphasis on the fact that Jeřáb is a product containing a superfood.
Dietitians attitude toward chosen modern food products

The aim of this thesis is to ascertain view of dietitians on "superfoods" promoted through the media. The thesis consists of a theoretical and practical part. The theoretical part is supported by foreign scholarly articles and clinical studies and is focusing on characteristics of five specific examples of "superfoods" (chia seeds, quinoa, goji berries, acai and cocoa beans). Each of these foods is examined primarily in terms of chemical composition, content of most significant substances and their prospective effect on human health. The practical part is focused on dietitians and their opinion on "superfoods". This part includes survey with the aim to answer the questions whether the dietitians have cognizance of "superfoods", if they recommend them in their practice and what is their opinion on this kind of food. Data evaluation is illustrated in graphs which concluded that "superfoods" are acknowledged by 90, 9% of asked dietitians and specific examples evaluated in this thesis are acknowledged by more than a half of respondents. In their practice the "superfoods" are recommended by 41, 7% of respondents and their opinion can be evaluated only from certain points of view therefore the attitude towards "superfoods" cannot be clearly determined as positive or negative.
