Study of the antioxidative potential of selected fruit marcs

Subject of this bachelor thesis was antioxidant activity of selected kind of fruits. Among selected kinds were the marc of red and white grapes, moldings from red elderberry and aronia. Two species of made capsules from marcs of white grapes and aronia were also subjected to analysis. Results of this bachelor thesis are summarized to four chapters. The first chapter compares the water content of drying at 40 ° C and 105 ° C. In the second chapter, the results of extraction in different proportions of solvent mixture ethanol - water and results of extraction in prepared artificial gastric juice are discussed. As a result, the water – ethanol mixture was a more effective solvent than artificial gastric juice. The third chapter deals with the results and discussion of the determination of the total content of phenolic substances. For the solvent mixture, the largest amount of polyphenols in the red vine marc was determined to be 43,56 mg.g-1, while in gastric juice the largest content in the elderberry was determined to be 11,89 mg.g-1. Capsules were also extracted in gastric juice, and 2,53 mg.g-1 was found in aronia tablets, while 5,93 mg.g-1 in white grape tablets. The last chapter compares the results of TAA measurements using the TEAC and EPR methods. The EPR method was more suitable for much diluted solutions than the TEAC method. The results of this work show that there is a large number of polyphenols and other antioxidants in the moldings that affect the overall antioxidant activity. Marcs have great potential for use as natural dyes or can be used to make a food supplement.
Comparison of content anthocyanin pigments in selected cultivars of black elderberry and grape

The purpose of this thesis is to compare the contents anthocyans in different varieties of European elderberry (Sambucus nigra L.). It was also studied the relationship between the content anthocyans in selected samples of blue grape varieties (Vitis vinifera L.) and position of the track, where the grapes were grown. The theoretical part describes elderberries and grapes in terms of botanical, chemical, and in terms of their using in the food industry. The dominant part of this chapter is to describe anthocyans and possibilities for their determination in the elderberry and grapes. Emphasis has been placed on the pH-differential method and determination by high performance liquid chromatography. The experiments are divided into two parts. The aim of the first experimental part is comparison of the total anthocyanins content in fifteen varieties of elderberry. The performed analysis shows that in terms of anthocyanins content for cultivation of elderberry in the Czech Republic the most suitable varieties are Mammut, Samyl, Reis aus Vossloch and Haschberg. In the second part of the experiments were determined total anthocyanins content in nine varieties of blue grape grown in the Mikulov region. For determination were used HPLC and pH-differential methods, as well as in the first part. The highest content of pigments was found in varieties Alibernet and Neronet. The present study focused on the suitability of the location pointed to vineyard south to southeast orientation plantings. At the end of the experimental part is a comparison of both methods of determination. Method using high performance liquid chromatography to provide very accurate results compared to less demanding pH-differential method of determination. This is recommended only for tentative determination of anthocyanins content in real samples.
Viniculture and wine-production from the legal point of view

This thesis deals with the legislation of viticulture and winemaking in the Czech Republic. The main goal of this thesis is to introduce to the readers both, professionals and non-professionals, viticulture and wine law in its full extensity. For this reason, we deeply analyze the Act No. 321/2004 describing viticulture and winemaking as amended by subsequent law. The thesis is composed of seven main chapters. The abbreviations, witch are subsequently used in the work, are defined in the separate chapter. The first part is an introduction to the topic and describes the origin of growing grape-wine and winemaking. The second part deals with the historical development of vineyard and wine law in the Czech Republic. For the sake of clarity, second part is divided into five subsections. The third chapter defines the position of vineyard and wine law in legal system of Czech Republic and characterizes this specific agriculture sector. The fourth part provides a review of written sources of vineyard and wine law. The chapter is hierarchically separated into the categories: international law, EU law and Czech law. Mechanické vlastnosti bobulí révy vinné a metody jejich stanovení

The aim of the work was to develop a literally research on the mechanical properties of berries and their determination methods. The mechanical properties of berries are in-fluenced by their structure (cell wall characteristics, strength, cohesiveness of neighbo-ring cells, fiber content and cell sizes) and genotype of the variety. For table grapes, the texture is a significant sensory property (particularly crispness). The mechanical proper-ties of grapes are also affected by climatic, soil and topographical conditions, in particu-lar the hardness and thickness of the skin. They are further influenced by harvest and harvesting (manual or mechanized). Methods for determining mechanical properties of fruit include penetration test, compression, tensile test, and shear test. Mechanical prop-erties can be determined indirectly by chemical methods (sugar content, extractability of polyphenols).
Kvalita ovocných moštů a burčáku

The aim of this bachelor thesis is to inform about fruit raw juices with a main focus on apple raw juice and partially fermented grape raw juice in our country called - burčák. The thesis gives attention on the basic data about fruit orchards and vineyards planted in the Czech Republic and their varietal composition. It focuses on the input raw material and its composition. The next chapter describes the technology of the production of raw juices and partially fermented grape raw juice and the subsequent conservation possibilities. The thesis also focuses on the quality of raw juices marketed on the domestic market and the statistics of the checks of the burčák made by the State Agriculture and Food Inspection. The conclusion of the thesis informs about the influence and benefit of these beverages on human health.

Main goal of my bachelor thesis is focused on new finding about soil, development, characteristics and also factors which have influenced it. There is also part which is pointed to differences of conventional viticulture and ecological viticulture and their soil characteristics. Major principles and goals are also mentioned in my thesis. In my practical experiments I studied comparisons between values of basic ethylene production and carbon dioxide which were coming from vineyards soil samples.

Spiders belong to one of the most important natural pest antagonists in many agroecosystems. The species diversity and abundance of spiders, hence their biocontrol potential, is directly related and is often increased by the presence of non-agricultural, non-productive areas in the landscape directly surrounded with agroecosystems. My research was focused on spiders related to the vine plats trunks, first of all as organisms reflecting the function of vineyard terraces in relation to increasing their heterogeneity, which in turn reflects on the resulting biodiversity of the landscape, and secondly as pest antagonists in vineyards, which can effectively and nature-friendly contribute to the sustainability of agricultural units. Research areas in the South Moravian Region were selected and species diversity and spider abundance were analyzed. Two vineyards at each site have been selected: classic - plain vineyards and terraced vineyards which were lined with non-productive slopes. From November 2013 to October 2014, 727 adult spiders belonging to 21 species and 7 families were recorded. Concerning the vulnerability of each species, 12 abundant species were found, 4 species were almost threatened, 3 were endangered species, 1 species was strongly endangered, and 1 species was critically endangered. According to the results, we can state that the species spectrum of spiders found on vine plant trunks may in the future function as a biocontrolling agent and may have an interesting influence on vine pests.

This thesis deals with the effects of climatic and soil conditions on grapevine. The regions of Hnanice and Šatov is described in detail. The main aim of the thesis is a description of the vineyard tracks in the mentioned regions, mainly in terms of the grapevine species, soil conditions, climatic conditions and the ways of grapevine growing. In adition, it describes important local winemakers and winegrowers. The practical part deals with the chemical and sensory analysis of the local characteristic wine.
