Tématem této bakalářské práce byla antioxidační aktivita vybraného druhu ovoce. Mezi vybrané druhy patřily matoliny z červeného a bílého hroznového vína, výlisky z černého bezu a aronie. Rovněž byly analýze podrobeny dva druhy vyrobených kapslí z výlisků bílého hroznu a aronie. Výsledky této bakalářské práce jsou shrnuty do čtyř kapitol. V první kapitole jsou porovnány obsahy vody při sušení 40 °C a 105 °C. Ve druhé jsou diskutovány výsledky extrakce v různých poměrech směsi rozpouštědel voda – ethanol a výsledky extrakce v připravené umělé žaludeční šťávě. Ve výsledku byla směs ethanol – voda účinnější rozpouštědlo než umělá žaludeční šťáva. Třetí kapitola se zabývá výsledky a diskuzím stanovení celkového obsahu fenolických látek. V případě směsi rozpouštědel bylo největší množství polyfenolů v matolinách červené révy stanovené na 43,56 ± 1,23 mg.g-1, oproti tomu v žaludeční šťávě největší obsah byl v bezinkách stanoven na 11,89 ± 0,07 mg.g-1.V žaludeční šťávě byly extrahovány i kapsle, u aróniových kapslí byl zjištěn obsah 2,53 ± 0,04 mg.g-1, zatímco u kapslí z matolin bílého hroznu 5,93 ± 0,05 mg.g-1. V poslední kapitole jsou srovnány výsledky měření TAA pomocí metody TEAC a EPR. Metoda EPR byla vhodnější pro hodně zředěné roztoky než metoda TEAC. Výsledky této práce dokazují, že ve výliscích je velké množství polyfenolů a jiných antioxidantů, které ovlivňují celkovou antioxidační aktivitu. Výlisky mají velký potenciál využití jako přírodní barviva nebo se mohou využít k výrobě doplňku stravy. Subject of this bachelor thesis was antioxidant activity of selected kind of fruits. Among selected kinds were the marc of red and white grapes, moldings from red elderberry and aronia. Two species of made capsules from marcs of white grapes and aronia were also subjected to analysis. Results of this bachelor thesis are summarized to four chapters. The first chapter compares the water content of drying at 40 ° C and 105 ° C. In the second chapter, the results of extraction in different proportions of solvent mixture ethanol - water and results of extraction in prepared artificial gastric juice are discussed. As a result, the water – ethanol mixture was a more effective solvent than artificial gastric juice. The third chapter deals with the results and discussion of the determination of the total content of phenolic substances. For the solvent mixture, the largest amount of polyphenols in the red vine marc was determined to be 43,56 mg.g-1, while in gastric juice the largest content in the elderberry was determined to be 11,89 mg.g-1. Capsules were also extracted in gastric juice, and 2,53 mg.g-1 was found in aronia tablets, while 5,93 mg.g-1 in white grape tablets. The last chapter compares the results of TAA measurements using the TEAC and EPR methods. The EPR method was more suitable for much diluted solutions than the TEAC method. The results of this work show that there is a large number of polyphenols and other antioxidants in the moldings that affect the overall antioxidant activity. Marcs have great potential for use as natural dyes or can be used to make a food supplement.
