Vliv vybraných podmínek pěstování na výnos rostlin "microgreens"

This bachelor's thesis deals with the cultivation of microgreens plants, focusing on the quest for an optimal growing substrate in terms of yield elements. The practical part of the thesis evaluates the influence of four selected growing substrates on the quantity and content of pigments in the produced biomass of three different micro-greens. To ensure result comparability, the plants are cultivated under defined con-ditions in phytotrons. Additionally, the thesis outlines the financial implications of cultivation on various substrates. The research also indicates that the optimal sub-strate for plant cultivation, based on the compared yield elements and the compared growing substrates, is the garden substrate Agro CS Natura. Similarly, plant produ-ction is most cost-effective when using the Agro CS Natura substrate.

The aim of the work is to summarize the current knowledge about microgreens. From a nutritional point of view, they contain a higher concentration of vitamins, minerals, etc., compared to adult plant forms. The method of cultivation affects the content of the mentioned substances, which this work will also deal with. The disadvantage of microgreens is their low durability. Currently, research is being conducted focused on the possibilities of extending their shelf life through specific storage conditions or encapsulation.

The subject of this thesis is to analyse the actual state of vegetable and microgreens market in Czechia and set a solid foundation for establishment of a microgreens business. The outcome of the thesis is supported by findings from analytic tools such as SLEPTE, SWOT, Porter´s Five Forces model and Lean canvas. The theoretical part includes definitions of basic terms regarding entrepreneurship, startups, and basic explanation of analytical tools. The outcome of the work is to assess all the acquired data and evaluate feasibility of the business plan.

The thesis focuses on the content of carotenoids (β-carotene and lutein) in 14 species of microgreens. Although microgreens are small in size, they are distinctive in taste, colour and health benefits. The results showed that different types of microgreens contain very different amounts of β-carotene and lutein. The β-carotene content ranged from 1.55–4.82 mg / 100 g fresh microgreens, while the lutein content ranged from 2.33–8.01 mg / 100 g fresh microgreens. Comparing the measured values in microgreens with the concentrations of these carotenoids in mature vegetables found in the literature, microgreens are often a richer source of β-carotene and lutein. Since carotenoids are biologically active substances with strong antioxidant capacity, the comparison of the content of these pigments in different types of microgreens is essential for the food industry and for the consumers.

Diploma thesis deals with the content of ascorbic acid in a selected range of "microgreens" type products. This new category of vegetables is rich in other phytonutrients, this thesis also deals with the content of total polyphenols. The theoretical part describes the chemical structure and properties of vitamin C, its biosynthesis, metabolism and function, as well as the recommended daily dose and in which sources it can be found. Polyphenols and their functions on the human body are also described. An important part is also basic information about microgreens, the germination process, growing conditions and an overview of species. At the end of this section, the methods used for the determination of ascorbic acid and polyphenols are described. The practical part is focused on the methodology, own measurements and results obtained for individual species of microgreens. Ascorbic acid was obtained by extraction from fresh samples, with oxalic acid in the first instance and metaphosphoric acid in the second instance. The ascorbic acid content was then determined by HPLC. Polyphenols were extracted from lyophilized samples into 80% methanol and the amount of polyphenols was determined spectrophotometrically. The highest concentration of ascorbic acid was in Black Tuscan kale and the lowest concentration was in Common sunflower. The highest content of polyphenols was measured in Garden cress, the lowest in Chinese chives.
Growing Microgreens in Nursery Schools

The diploma thesis focuses on the topic of cultivating microgreens in nursery school. Microgreens are young plants of various species of vegetable, that are grown in soil and are harvested approximetely after ten days. The simplicity of growing microgreens makes it an appropriate activity for preeschool-age children. Besides rewarding the children with nutricious food, it brings children the oppoturnity to develop key competences and pre- literacies. The theoretical part is an information base for growing microgreens in kindergarten conditions. It describes cultivating plants in kindergarten, it deals with historicaly, legislatively and didactic point of wiew and also describe kinds of microgreens, possibilities of use and cultivation procedures suitable for kindergarten. The aim of the diploma thesis is to present the possibility of growing microgreens in nursery school with preschool children. The empirical part focuses on the design and implementation of a set of activities in which children in kindergarten grow microgreens. In addition to cultivation, other activities are also included, in which children use the topic of microgreens in individual stages of growth.
