Confectionery Production as a Part of Family Housing

This bachelor’s thesis deals with design of timber frame detached house with confectionery workshop located in the new built-up district in Velké Meziříčí. It consists of one-storey living house with residential attic connected to ground floor workshop. The house has a gabled roof with standard roof frame. House is designed for four people. Entrance is situated to the north-west and living rooms are situated to the south-east and south. The work contains drawings and technical descriptions and it is composed as implementing project.

When choosing a topic for my bachelor's thesis, I explored and discovered new positions in design. The connection between gastronomy and design developed naturally from our family business and my long-term work in gastronomic establishments of different kinds. All this also led to frequent interpretations in studio work during my studies. I enjoy approaching food from the position of a designer because of a certain softening of the design process, where it is possible to replace the factory with the kitchen and enter the lives of the users through their sensory perception of my work. At the same time, food is one of the most important elements of our social life and personal experience. The bachelor thesis, therefore, builds on a long-standing area of interest of mine and is based on thorough research of the topic at hand. I addressed the question by searching for tradition in the local confectionery industry. What defines local desserts and the culture of enjoying them? In the initial phase, the summary of which is part of this theoretical part of the Bachelor's thesis, I looked at the history of confectionery in our territory, the concept of dessert and what constitutes it, and I addressed what forms and functions the confectionery has had in history. In the next phase, I used this knowledge to create a new product for the pastry shop and to map the current aesthetics of the industry.

This bachelor's thesis deals with the creation of a business plan for the establishment of a cake factory called "Dortíkárna". The theoretical part of this thesis describes the basic terms of business, the initial steps in establishing a secondary trade, marketing mix, sociological research, and the definition of confectionery. The thesis then deals with the realization of the business plan based on analyses and applied to the situation. Design of the promotional website and social network advertising is also covered. Finally, there is an evaluation of the entire business plan.
Sweet France - the history of French pastry

The subject of this bachelor thesis is confectionery craft and pastry making as a French cultural phenomenon. The first part focuses on a historical development of French confectionery and on an analysis of fundamental recipes that lay foundation of many French desserts. Furthermore, the thesis deals with typical French pastries both internationally recognized desserts as well as regional specialties. The practical part of this thesis was dedicated to the creation of educational materials focused on French pastry arts.

Bachelor thesis is about new trends in confectioners. This thesis contains the dividing and specification of materials and using it for baking. Next part itis focused on new and modern materials and techniques. The differences between traditional and modern materials and techniques, also characteristic and the evolution of new trend in decoration and design is mentioned. In this thesis, I also commented of the using of semi products, preservatives, function and application of improvers. In practical part there was made public research in all age categories. In the end I created presentation of my own production.

Marketing activities in the confectionary sphere

This Bachelor thesis titled "Marketing activities in the confectionary sphere" is divided into two parts, theoretical and practical. The former focuses on the marketing mix and explains the terms related to entrepreneurship. The latter part deals with the Business Plan and setting up of a business in the confectionary sphere. Included in this part is also market research. The goal of the thesis is to verify the correctness of current marketing practices and to determine the viability of a Cupcake Wonderland retail store.
