The issue of food waste

This thesis deals with the issue of food waste from the global perspective. The aim of the thesis is to summarize this issue from available world sources and on the basis of its own experience from the practice in public catering facilities. The thesis defines areas of food waste within food chain, identifies the economic, social and environmental consequences resulting from careless food handling and describes organizations and companies dealing with the prevention of food wastage. There are recommendations for the prevention of food waste in households. The practical part of the thesis analyzes food waste in Czech households, measured for one week.
Sink disposers and theirs importance in biological degradable waste removal.

Some 30 - 50 % of municipal solid waste (MSW) is biodegradable waste. Most of this waste is sent to landfills or incinerated and is not recovered. According to Waste Management Plan of Czech Republic based on the Landfill Directive of EU, Czech Republic should to reduce weight of biodegradable waste sent to lanndfills to 75 % in 2010 and 35 % in 2020 compared with the amount that had been landfilled in 1995. In rural areas biodegradable waste is fed to animals or treated by home composting. However in urban areas the collection of separated biowaste is problem for a long time. Food waste disposers (FWDs) presents interesting alternative for the biowaste disposal. They enable the separation of food waste at source by shreding it in a kitchen sink. FWDs utilize existing infrastructure of sewer system to transport shreded wastes to wastewater treatment plants (WWTP). Wastes can be disposed in WWTPs by anaerobic digestion - the best method for disposal of food waste of animal origin. This work concentrates on literature research of studies about feasibility of FWD as a instrument for biodegradable waste removal and compares arguments for and against using of FWDs in households. Interventions in the streets - food waste

This thesis deals with the phenomenon of street art and the problems of excessive food waste. The aim of this work is to define both of these problems and in the practical part to create artifact linking the two themes in critical notice readily available to a wider audience. Content of theoretical part is focused on the associated ways of art in public space and their core personalities. The topic of food waste tries to capture most factors which contribute to this problem. The main contribution is the definition of street art and comparison of different types of food problems by location and local customs. Based on the collected data it is possible to proceed with the issue personally responsibly or to work with data further, whether educative way or other artistic projects.
Waste materials utilization for preparing hydrolysates for the fermentation phase.

Bachelor thesis focuses on the study and comparison of different types of hydrolysis, their optimization and maximization of yields for the upcoming fermentation. Orange peel was chosen as a substrate to conduct the experiments. First, the substrate was mechanically grinded to form a suspension. Each suspension then underwent one out of the examined methods of hydrolysis. Chosen methods were physical, such as microwaves, increased temperature or ultrasound, and chemical acidic and alkaline. Combinations of both types were also examined. The last optimized method was enzymatic hydrolysis. First set of experiments was conducted using enzymes Novozymes® NS50013 and NS50010. Production of cellulase and pectinase enzymes by A. niger during solid-state fermentation that lasted 10 days was also studied. The yields of reducing sugars of all the experiments were calculated using the Somogyi-Nelson method. Enzymatic hydrolysis was proven to be the most effective using the combination of both of the enzymes for a period of 96 hours at pH = 4.5 and temperature 45 °C. Yield of the reducing sugars under these conditions reached 27,4241 ± 0,0007 gl-1.
Food waste

This thesis looks into the complex issue of food waste and consists of a theoretical and practical part. The first part of the thesis aims at analyzing economic and political context of the food waste and also defining fundamental terms and legislation. It is followed by a description of the causes of food waste in all stages of the food chain and selected consequences of food waste. The main goal of the second part of the thesis is to demonstrate food waste in a real case of two Czech companies, which operate in food distribution. In this part of the thesis I have performed own qualitative research with representatives of the companies based on a structured questionnaire. In the conclusion, I have summarized main results of the research and made my own suggestions for solving this problem.
Food banks in the Czech Republic

The aim of this bachelor thesis is to identify the operation of food banks in the Czech Republic. It is also to outline how the National Food Collection works, last but not least, to contribute to the network of food banks in the Czech Republic being complete, i.e. for there to be a food bank in every region. The theoretical part is about the food problem; specifically, it focuses on identifying hunger and malnutrition. It also defines food waste and offers a way to resolve this problem - food banks. The practical part consists of questionnaire survey, which is performed at the level of the eleven food banks in the Czech Republic. Another part of the practical part is observation of the National Food Collection. And the last part is the actual establishment of a missing Food Bank in the South Bohemian Region.
Corporate social responsibility versus food waste

The aim of the bachelor thesis is to introduce the concept of social responsibility, to highlight the problem of food waste and to provide possible solutions. The work consists of two main parts - theoretical part and practical part. The theoretical part describes the historical development, definitions and the basic characteristics together with the three main pillars of the concept. The practical part focuses on food waste and provides an overview of the causes and consequences in the environmental, social and economic dimensions. At the same time, there are described steps made by Tesco towards the elimination of waste and possible improvements in the domestic market.
Výzkum pro hospodaření s odpady v rámci ochrany životního prostředí a udržitelného rozvoje (prevence a minimalizace vzniku odpadů a jejich hodnocení): Problematika biologicky rozložitelných odpadů

V první části jsou popsány možnosti nakládání s biologicky rozložitelnými odpady v ČR a EU včetně související legislativy, informací o pohledu řešení v EU, použitelnosti strategií a nástrojů k redukování množství biologicky rozložitelných odpadů, které se ukládají na skládky. Na odebraných vzorcích digestátu z bioplynových stanic byly vyhodnocena rovnocennost dvou způsobů stanovení zbytkové produkce bioplynu pro určení stability digestátu (systém OxiTop Control a měření plynovou byretou). Na základě výsledků hodnocení byla upravena metodika testu zbytkové produkce bioplynu z digestátu. Byla aktualizována databáze zařízení zpracovávajících BRO v České republice.
Výzkum pro hospodaření s odpady v rámci ochrany životního prostředí a udržitelného rozvoje (prevence a minimalizace vzniku odpadů a jejich hodnocení): Biologicky rozložitelné odpady

V subprojektu 1 výzkumného záměru byly v roce 2007 sledovány možnosti nakládání s biologicky rozložitelnými odpady a shromážděny relevantní legislativní předpisy. Ve vzorcích kompostů fermentátů a kuchyňském odpadu byly stanoveny mikrobiální ukazatele (intestinální enterokoky, Escherichia coli, termotolerantní koliformní bakterie, koliformní bakterie a Salmonely) a vybrané chemické ukazatele (As, Cd, Cr, Hg, Ni, Pb, AOX, suma PCB, suma PAU, uhlovodíky C10-C40). Ve vybraném kompostu byla stanovena respirační aktivita po čtyřech dnech (AT4), toto stanovení podává informaci o stupni stabilizace BRO, tedy zda testovaný vzorek je již možné uložit na skládku.
