Roženková, M. Business Plan in Gastronomy. Bachelor thesis. Mendel University. Faculty of Regional Development and International Studies, 2017. This bachelor thesis deals with the business plan for FORALL s.r.o. company pro-viding services in gastronomy. The thesis consists of two parts. The first, theoretical part explains the general terminology and defines the types of business en-tities. Also, it describes general requirements on a business plan. The second, practical part presents particular business plan of the company including company description, market analysis and financial plan. The purpose of this thesis is to find out whether the company might succeed on the market. The conclusion of the thesis is that this business plan is useful basis for foundation of a new restaurant.
Vegetariánství a jeho agroekologické souvislosti

This thesis aims to point out the connections between meat, vegetarian, vegan diet and the environment. The history of vegetarianism and the relationship and the anchoring in individual religions are analyzed in literary research. The differences between vegetarianism and veganism at present, the vegetarin motivation and above all, the impact of meat consumption on environment are analyzed next. As the methodology is used two kinds of field surveys and SWOT analysis. In practical part was for comparison selected three sample menus and their impact on the environment. The results of all the methods used confirm, vegetarian diet is not necessarily more environmentally friendly than a meat-based diet, depending on consumer preferences of individuals. However vegan diet is prooved as more environmental friendly diet.
Non-specialists' awareness of alternative nutritional movements and their risks

Nowadays alternative nutritional directions with all their forms are quite widespread. For many people, vegetarianism is not only skipping meat consumption, but also lifestyle. However, deliberate omission of certain types of food carries the risk of a deficit of some important substances. The aim of this thesis was to map awareness of lay people about vegetarianism and veganism. Find out if respondents know what excludes vegan diets, how they differ from vegetarianism and what the risks are. The theoretical part deals with vegetarianism and its division. The thesis focuses mostly on veganism. The theoretical part also contains principles of properly composed vegan diet according to the Czech vegan society. It also contains a description of substances which may be defficient in the vegetarian and vegan diet. It shows the functions of these substances in the body, in what foods they are found and how their deficiency manifests. The practical part was carried out by the quantitative method of the questionnaire survey. The research sample consisted of the lay population most frequently at the age of 20- 29 years. Alternative ways of eating and their prevalence in secondary school students

This bachelor thesis is focused on alternative ways of eating of secondary school students in the Czech Republic. The theoretical part shows us the characteristics of the most known alternative diets and their possible nutrition risks. The main goal was to find out the degree of a favour and reasons for the transition to alternative eating habits, subsequent feelings of change and necessity of using food supplements. Finally, I summarize all my knowledge I have gained during my bachelor work. The gathered data are presented in graphs. The analysis is based on electronic questionnaire.
Nutrient deficiency in vegetarianism in children

The bachelor thesis deals with nutrient deficiencies in vegetarianism in children. This topic is becoming more and more important, because at present an ever increasing proportion eats in this manner. However, it is important to realize that this diet brings various risks in addition to all the effects that have a positive influence on organism. Especially during growth and evolution of young organism and groups of infants, young children and adolescents are threatened most. The objective of this bachelor thesis was to find out which nutrients are in deficiency in vegetarianism in children. There were two research questions formulated: "What nutrients are in deficiency in children, who eat a vegetarian diet?" and "What leads childern to eating a vegetarian diet?" The thesis is divided into two parts, theoretical and practical. The theoretical part focuses on the definition of basic concepts such as vegetarianism and its distribution. It also deals with the risks and preferences of this manner of eating and the problem of the lack of macro and micro nutrients. The practical part was processed using qualitative reseach. The focus group was consisted of 4 children. It was necessary to obtain for the reseach fourteen-day diet records from the children and provide blood sample. Nutrients were found in the blood samples, i. e. the nutrients that are in deficiency, and the diet records were further calculated in the Nutriservis program. The results of the survey are presented in charts and in textual evalution. The reseach shows that in vegetarianism we can find some nutrients in deficiency in all of my respondents and there is a need to increase awareness of that issue.
Alternative nutrition and its health risks for children

This diploma thesis discusses alternative diets. The theoretical part of the work clarifies the possible reasons leading to the decision to eat an alternative diet, and also gives the forms of alternative diet and the possible risks arising from these diets, early human development is described here along with the diet during its individual periods. The practical part of the thesis, which was realised using the questionnaire survey method, endeavours to establish how much knowledge women have about alternative diets and also discusses the issue of preference of an alternative diet. The performed survey found that alternative diets are not significantly widespread among the respondents and therefore knowledge about them is insufficient, unfortunately even respondents who actually feed their children an alterative diet lack knowledge. On the basis of the established information a lecture was held on the topic of alternative diets, the purpose of which was to clarify the basic facts about alternative diets and spread knowledge about them.
Alimentary concepts in schoolchildren

This thesis deals with children's concepts of food, especially with a focus on meat consumption and avoidance of consumption. It is an ethnographic study based on observations and interviews with children of the 4th grade of elementary school. The results are divided into four aspects of eating. The social aspect (1) deals with the sharing of food and with the social identity, the health aspect (2) examines children's concepts of the food's healthiness, the moral aspect (3) maps children's ethical considerations of meat consumption including legitimation and the cognitive aspect (4) discusses the cognitive issues of eating. Diet quality assessment of followers of selected alternative dietary lifestyles particularly focusing on vegetarianism in adult population

The subject of this bachelor thesis is the evaluation of the quality of nutrition of adult representatives in alternative ways of eating, namely vegetarianism. Research is conducted through questionnaire surveys and prospective dietary entries. The thesis is composed of several parts. The first describes the theoretical points for alternative ways of eating. The next part defines the objectives of thesis and the research questions and together with the methodology define the parameters of the research. The core chapter consists of results where the dietary entries and answers from the questionnaire survey of individual respondents are analyzed in detail. The following discussion compares the results with literature and other resources. Finally, in the last part of thesis are summarized the most important conclusions corresponding to the stated resereaach questions and objectives.
