BÍCOVÁ, Pavla
Products of young barley and chlorella belong to the increasingly popular nutraceuticals due to their rich nutritional composition. The aim of the thesis was: to assess the offer of young barley and chlorella in the market network in the Czech Republic, to evaluate the knowledge about these products and the effects of using these dietary supplements by questionnaire survey (n = 338) and to assess the quality of the selected products. There is a relatively wide range of chlorella (57 products; 75 % in tablet form) and young barley (24 products; 71 % in powder form) products on the Czech market, which differ in composition, processing method, country of origin, price and information provided about them. Knowledge of the production method and the contents is important when consumers choose products. This knowledge was found to be low among some users. Awareness increased statistically significantly with age and educational attainment. The majority of users of chlorella (181; 55 %) and young barley (224; 68 %) did not suffer from side effects associated with initiation of use. The most frequently reported adverse symptoms were related to the gastrointestinal tract (diarrhoea, constipation). The most frequently reported beneficial effects were more energy and vitality, improved digestion and immunity. The microbial quality of the chlorella and young barley samples met the legislative requirements. Total polyphenol content and total antioxidant activity were lower (1.20?0.00 mg/g - 1.35?0.01 mg/g, 0.73?0.00 mg/g - 0.84?0.02 mg/g, respectively) in chlorella (11.44?0.26 mg/g - 7.92?0.25 mg/g, 10.36?0.00 mg/g - 22.76?0.27 mg/g, respectively) compared to young barley.
Vliv vybraných faktorů na rychlost kažení plodové zeleniny
ŠUTKOVÁ, Jana
Fruiting vegetables are among the most consumed vegetables worldwide, so it is important to constantly optimise storage conditions. The aim of the thesis was to assess the effect of tomato treatments (tap water, Cibulex) and storage temperatures (6.5 °C, 15 °C, 21 °C) on the rate of spoilage, to evaluate the preferences of respondents (n=347) regarding the consumption and purchase of tomatoes and to assess the supply of tomatoes in the market network. Tomato samples treated with Cibulex solution showed a lower increase of selected groups of microorganisms compared to control samples. In the questionnaire survey, it was found that 97% of the respondents consumed tomatoes and preferred domestic cherry tomatoes, with a sweet taste and juicy consistency. When purchasing tomatoes, respondents are mainly influenced by the price, quality and appearance of tomatoes. A relatively large proportion of respondents (63 %) store tomatoes at refrigerator temperature, which is not suitable because of the loss of flavour and taste of tomatoes. A survey of the tomato offer in nine supermarket chains (Tesco, Albert, Penny, Kaufland, Globus, Flop, Coop, Norma and Lidl) revealed a wide range of tomatoes during the summer and winter periods. The widest range (n=12) was found in the Globus and Lidl chains during the winter period.

Agricultural literacy - a knowledge probe for primary schools
BOČKOVÁ, Natálie
The aim of this thesis is to determine the level of agricultural literacy among fifth grade primary school students attending schools located in rural areas. The topic of the thesis was motivated by the lack of attention to this issue in the Czech environment. Despite the fact that some topics related to agricultural literacy are included in the Framework Educational Programme (RVP ZV), the very concept of agricultural literacy is relatively new in the Czech Republic. The literature section focuses on the landscape and its functions in relation to agricultural literacy, the definition of the term 'agricultural literacy' itself and the development of its inclusion in the curriculum. At the same time, the thesis analyses the RVP and the occurrence of topics aimed at strengthening agricultural literacy in pupils. Last but not least, the thesis offers an overview of teaching methods and forms that could contribute to the formation of an agriculturally literate society from the beginning of school attendance. The methodological part contains basic information about the respondents participating in the survey and information about the questionnaire design. Furthermore, the process of measurement is written in this part of the thesis. The results and subsequent comparison with research conducted with a different set of respondents is recorded in the final part of the thesis.
