Food industry in the Czech Republic and abroad

The topic of this thesis is Food Law in the Czech Republic and Abroad. The purpose of the thesis is to introduce food law of the Czech Republic and England, with an emphasis on EU food law. As this field is very broad, only basic attributes and some interesting parts and issues of food law may be covered. The thesis is divided into seven chapters. In the first chapter relevant legal sources are introduced. Food law is regulated by many rules. Generally, these sources may be divided into primary and secondary legislation both at national and EU level. Furthermore, some important international aspects of food law are laid down as well. The second chapter simply is to present legal definitions of essential terms within the scope of Czech and EU law. The third chapter is crucial one for following chapters as it establishes most of general principles in environmental law as well as principles specifically applicable in the field of food law. It is often referred to these principles later in the thesis. Furthermore, this chapter also contains an introduction of the European Safety Food Authority and the Rapid Alert System for Food and Feed as well as many ways of national control of food safety. The aim of this methodology was to describe a protocol for the rapid and reliable detection of microscopic fungi from the genusPenicillium and Aspergillus capable of producing mycotoxins ochratoxin A and citrinin in cereals, preferably prior to their production and accumulation, using polymerase chain reaction (PCR) and their use, e.g. for the evaluation of health and hygienic safety of plant products.

Systems for monitoring hygiene in practice - implementation of the HACCP system in the selected processing plant

System of HACCP (Hazard Analysis and Critical Control Points) is the main and unbroken system in the field of food safety. There is a duty for food producers in the Czech Republic to implement a system of critical control points into their business. It means to identify points (critical) in the process of production where can be the highest hazard for food safety, to monitor these points, to control and register data regularly. Production of safety food, protection of consumers, and also protection of a producer is the principle and result of proper and functional system of HACCP. Documents, an indivisible part of system of HACCP, were drafted for a selected company. Analysis of hazards was also done with the result of setting control points (CP) and two of critical control points (CCP) in a production step of cooling and packing.

The Food Law in the Czech Republic and in Foreign Countries

Anglický abstrakt The Food Law in the Czech Republic and in Foreign Countries The purpose of my thesis is to analyse and characterise the food law in the Czech Republic and in selected foreign countries. The thesis focuses on providing comprehensive view of the general part of food law but also discusses selected aspects of food law and related issues. The reason for my thesis is my long-term interest in the field of human nutrition. Therefore I intended to gain some knowledge of the legal framework of food. My thesis is based on the aproach of analysis and synthesis. I also use the linguistic, logical and historical method in my thesis. The comparative method is used in the two last chapters (Chapter Twelve and Thirteen) which deal with the comparison of food law in the Czech Republic and selected countries. The text of my thesis is divided into chapters, subchapters and parts. The thesis is composed of fourteen chapters (including Preface - Chapter One, Introduction - Chapter Two and Conclusions - Chapter Fourteen). The interaction between stored product arthropods and pathogenic microorganisms causing hazard effect tot he consumers

The ecological feeding interaction between arthropods and pathogens causes damage of stored plant commodities for human food and animal feed. This damage leads to loss of quality and quantity of stored products. The stored commodities are inhabited by microscopic fungi and various bacteria. These moulds are producing mycotoxins. The bacteria in stored products include human pathogens and also bacteria which are able to transfer the genes of antibiotic resistance. Fungivorous arthropods are able to distribute them to the new habitats and indirectly influence mycotoxin contained in stored food. They also disperse some bacteria of pathogenic influence on human or bacteria able to transfer genes of antibiotic resistance in stored plant commodities. The study summarizes possible risk effects of microbial and arthropods pest interaction to human.
