The diploma thesis deals with the identification and evaluation of factors that affect the application of regional fruit and vegetable production in school catering facilities. The Czech Republic and the South Bohemian Region are not particularly self-sufficient in fruit and vegetable production. The opening of the market in the last three decades has made it possible to cover a large part of the demand for fruit and vegetables by importing completely new species for us, but gradually also common species, which are pushing the production of domestic growers out of the market. In addition to the economic impact, imports also have a negative impact on the environment, but also on employment and the loss of adequate self-sufficiency. The diploma thesis follows up on the bachelor's thesis, which sought out fruit and vegetable growers in the South Bohemian Region and found out the range of production and its application in school catering facilities. In this work, the need for fruit and vegetables in school canteens of the South Bohemian region and the potential of its coverage by regional producers is specified. The aim is to evaluate the factors influencing the application of regional fruit and vegetable production in school canteens and to suggest possible measures to improve the current situation. The questionnaire survey and controlled interviews with local growers show that the existing programs "School Fruit" and "Product and Food Map of the South Bohemian Region" do not sufficiently fulfill their functions. The relatively low competitiveness of suppliers of domestic production has its share in this. The improvement of the situation is hindered by the great fragmentation of producers, relatively small quantities and sometimes the quality and availability of production, lack of processing capacity, seasonality and lack of suitable storage space, product price and at the same time low ability to communicate, cooperate, abide by agreements and form stable relationships.
The presence of omega-3fatty acids in the nutrition of children in preschool and school meals.

Nutrition and diet in general are the factors that can be used in the development and evolution of many diseases, that can occur in preschool age. Therefore, the appropriate composition of the diet is very important as for the proper growth and development of the child's body, but also for the function of certain children's organs. This diploma thesis is focused on the nutrition of children in preschool and school meals and on the consumption of omega 3 fatty acids and their filling of the consumer basket in the fish commodity according to the standard in individual years. Omega 3 fatty acids have a huge impact on human health and are an important element for children, which contributes to their health and to the prevention of the occurrence of non-communicable diseases of mass occurrence (diabetes, obesity, etc.). Theoretical knowledge, which is formulated in the theoretical part, were obtained from scientific and professional publications or periodicals, which are searched in databases of scientific and scholary literature. The actual part contains the results of filling the consumer basket in the fish commodity according to the standard at six primary school cafeterias, which are located in the Czech Republic and compares the results with the recommendations of the Decree of the Ministry of Education of the Czech Republic nr. 107/2005.
Analysis of the quality of the food in the school canteen and verifying the possibilities of improving selected indicators costumer basket.

The diploma thesis deals with current problems in the field of school feeding in a selected school canteen. The main aim is to map out the situation in terms of the composition of the consumer basket in the school canteen and determine possible improvement in the individual components of the consumer basket. School feeding is a part of the educational process and follows up on the fulfilment of the school educational program. It is also an environment for non-formal education in terms of strengthening good eating habits and social interaction during eating. Students acquire social and psychological competencies for life when participating in school feeding. They draw on dietary important practical knowledge in the field of nutrition and also learn social behaviour in eating in a non-violent way. By obtaining the consumer basket of the given school canteen, possible deficiencies associated with better filling were surveyed over three years. The findings that show problems with some components of the consumer basket, such as pulses or quality fresh vegetables, are the output of the work. The results of the survey revealed that the cause of this problem is insufficient financial resources for the purchase of better quality, mainly fresh, food e.g. vegetables. The aim of the diploma thesis was to process the obtained data of a specific school canteen in Central Bohemia and analyze the individual components of the consumer basket in the years (2016 - 2018) furthermore, a comparison of the consumption of raw materials in the consumer basket with the consumption of the given raw material per person within the household consumption monitored by Czech Statistical Office. The theoretical part, in addition to information on the nutritional requirements for school children, describes the current official system of dietary control, based on the so-called consumer basket, which is based on established weight standards of individual food for appropriate age groups of children. The research group consisted of 773 pupils in the age range 6 - 15 years from a primary school in the Central Bohemian Region. The obtained data were processed graphically using basic statistical values.

The bachelor's thesis deals with the functionality of the "Product and Dining Maps of the South Bohemian Region" (http://www.produktova-mapa.cz/) as a means to shorten distribution channels in the region and create supplier-customer relationships between agricultural primary producers and processors. The aim is to make greater use of regional basic food production. The open market in recent decades has enabled a significant expansion of the range of food supply by importing a wide range of products. Multinational retail chains have very well-developed marketing strategies and have not only dominated the network of stores, but have also become major suppliers of public catering facilities. Imports of not only processed products, but also basic foodstuffs often push domestic producers out of the market. In addition to economic impacts, imports also have a negative impact on the environmental burden and also on employment and the loss of adequate self-sufficiency. One of the ways to remedy the situation is to support links between regional suppliers of food products and their cooperation with school canteens. The work assesses the potential of supply and demand of basic raw materials monitored in the consumer basket of catering in school catering facilities. The questionnaire survey and controlled interviews with producers registered in the "Product and Dining Map of the South Bohemian Region" show that it has great potential for improving its function. This is hindered by the great fragmentation of producers (size of production, assortment, interests ...) and at the same time by the small ability to communicate with each other and with customers, to observe agreements and to establish stable relations. Another shortcoming on the supply side is the relatively small quantity and sometimes the quality and availability of food from individual producers, the lack of processing capacity, seasonality and lack of suitable storage space and the fluctuating price of products. Half of the respondents from the manufacturers do not know the product map - the potential of the offer through this portal is great, but untapped. On the customers' side, weaknesses include ignorance of the product map of school canteens, limited communication between suppliers and canteens and, due to congestion of school canteen managers, a tendency to simplify orders from suppliers who can provide the widest possible range of food, including small producers in the region.

Competency profile of the school canteen manager

Sumarry: The work focuses on the problem of canteen manager competence. It is based on up-to-date theoretic knowledge of competence and specifies the aims of modern school boarding in canteens. The work analyses the results of the survey the aim of which was to judge the particular competence of the respondents. Canteen manager competence profile based on the theory and survey results was created afterwards. This profile can be used by the management of schools for the employee selection, the analysis of employees` educational needs or for their assessment.
Nutritional Habits of Children Younger School Age and their Ability o Influence in Primary School

The aim of this work is to draft a project concept of good nutritional habits for the 1st Primary School. The theoretical part describes the effect of nutrition on child development and the status of health education in the curriculum and the school with a focus on nutritional behavior. The practical part is focused on the description of the research investigation and by which is prepared to draft the project forming good nutritional habits.

The topic of school catering operation is an integral part of the management of nursery schools, primary schools, secondary schools and other school organizations. The provision of school catering services is one of the duties of school managers - that is the reason why is this issue considered as a part of school management. This work is divided into several thematic parts. It the introduction part are explained terms concerning the subject of school catering, then the connection with Czech legislation is explained. Following chapters explain possible advantages of using informational technologies and their benefits for clients as well as for canteen operators. This part also deals with the area of communication, ordering system, inventory, and accountancy.
