Tato bakalářská práce pojednává o technologii výroby piva s možností nahrazení části sladu chlebem. Základem bylo zjistit a navrhnout nějaké reálné varianty. Proto se daná práce detailněji zabývá procesem sladování i vaření piva. Pochopitelně je i nastíněna technologie výroby chleba či běžného pečiva. Důležitou součástí piva je správné fungování enzymů, které jsou taktéž předmětem tématu. Neměli bychom zapomínat na „skrytá“ nebezpečí u zmíněných výrobků, jež vznikají ve vyšších teplotních fázích, zejména se jedná o sloučeninu akrylamid. Ostatní kapitoly se snaží poukázat na fakt, že oblíbený zlatavý mok nemusí být jen historií a současností, nýbrž i budoucností. This bachelor thesis addresses brewery technology that allows partial malt substitution with bread. The first task was to find and propose ways of doing so. For this reason, the thesis offers an in-depth analysis of malting and beer brewing. Also, a technology of bread production and common pastry is presented. An important part of the brewery is the correct behaviour of enzymes, which is also discussed. Furthermore, “hidden“ hazards occurring with these products at higher temperatures, mostly being acrylamide compound, should not be omitted. Other chapters address the fact, that beer is not only a matter of the past and present but is also a subject of the future.
