Abstrakt: [cze][eng] Diplomová práce se zabývá aplikací úloh z biochemie rozšířených o materiální a multimediální model ve výuce chemie na střední a vysoké škole. Hlavním cílem bylo zjistit, zda navržené úlohy splňují kritéria pro zařazení do výuky biochemie v rámci laboratorních cvičení ve středoškolských seminářích a vysokoškolských laboratorních cvičeních. Pro analýzu byl použit kvalitativní výzkum metodou polostrukturovaného rozhovoru, inventáře vnitřní motivace a dotazníku vnímání činnosti. Práce je rozdělena na teoretickou a praktickou část. Teoretická část obsahuje informace o enzymech, jejich aktivním centru a dnešních pohledech na jejich funkci. Dále je zde popsán vznik "guest-host" interakce mezi acidobazickými indikátory a makrocyklickými sloučeninami-cyklodextriny, které slouží jako modely pro demonstraci interakce mezi substrátem a aktivním místem enzymu. Poslední kapitola teoretické části je věnována metodice výzkumu úloh na střední a vysoké škole. V praktické části jsou popsány úlohy včetně experimentálně zjištěných dat pro jejich realizaci a veškeré pomůcky nutné k jejich provedení. Dále je v ní popsána tvorba a použití materiálního a multimediálního modelu. V neposlední řadě jsou v textu výsledky a postupy pedagogického výzkumu zaměřujícího se na kvalitu navrhovaných úloh a jejich možného zařazení do...The Diploma Thesis deals with the application of biochemistry tasks extended by a material and multimedia model in chemistry teaching at high school and university. The main objective was to find out whether the proposed tasks meet the criteria for inclusion in the teaching of biochemistry within laboratory exercises in high school seminars and university laboratory exercises. Qualitative research using the method of semi-structured interview, intrinsic motivation inventory and activity perception questionnaire were used for the analysis. The thesis is divided into a theoretical and a practical part. The theoretical part contains information about enzymes, their active center and today's views of their function. Furthermore, the emergence of a "guest-host" interaction between acid-base indicators and macrocyclic compounds - cyclodextrins, which serve as models for the demonstration of the interaction between the substrate and the active site of the enzyme, is described. The last chapter of the theoretical part is devoted to the methodology of research of tasks at high school and university.
