Středověká kuchyně patří tradičně do hájemství historické nebo kulturní antropologie, protože stravování odráží zvyklosti rozdílných společenských vrstev, etnických skupin a náboženských předpisů (půst, košer jídla). Stravování náleží ke složkám rituálu a proměňuje se v závislosti na hospodářské a společenské změně. Předkládaná práce se trochu netradičně zabývá otázkou, jak se dobová kuchyně vaří dnes. Zvýšený zájem o výzkum středověké každodennosti a dvorské společnosti v posledních dvou desetiletích rozšířil míru poznání tehdejšího života a zpřístupnil tyto informace zájemcům o historii z řad široké veřejnosti. Máloco je víc každodenní, než příprava a konzumace pokrmů. Přesto se zdá, že stejně jako před staletími i dnes je něco tak obyčejného jako vaření odsunuto mimo hlavní zorné pole, mimo podium, na kterém je historie předváděna. Nebo je tomu jinak? Dobová kuchyně je něčím víc, oživuje kořeny našich stravovacích zvyklostí, naší kultury a tehdy stejně jako dnes je společné jídlo tmelem sociální skupiny. Předmětem této práce je seznámit čtenáře s dobovou kuchyní 1. pol. 14. století, a ukázat různé přístupy k dobovému vaření na akcích oživené historie jako cesty, které mají sice společný cíl, ale v provedení se výrazně liší. Proč tomu tak je, když výchozí teoretická základna je k dispozici... Traditionally, medieval cuisine belongs to the realm of historical or cultural anthropology, as the diet reflects the customs of different social classes, ethnic groups and religious regulations (fasting, kosher meals). Meals are part of ritual and change according to economic and social change. The present work deals in a somewhat unconventional way with the question of how period cuisine is cooked today. The increased interest in research on medieval everyday life and courtly society in the last two decades has expanded the level of knowledge of life at the time and made this information available to those interested in history from the general public. Few things are more everyday than the preparation and consumption of food. Yet today, as centuries ago, something as ordinary as cooking seems to have been pushed out of the main field of vision, off the stage on which history is performed. Or is it otherwise? Period cuisine is something more, it brings to life the roots of our eating habits, our culture, and then as now, the communal meal is the cement of the social group.
