Abstract: The scope of this work was to isolate and characterize the non-cellulosce components of secondary plant sources (bran, chaff) of the spelt (Triticum spelta L.) and evaluate the sequential extractions with respect to the yield, chemical composition and antioxidant activity of the obtained polysacharide fractions isolated from the bran in comparison to those isolated from the chaff.
