Jsou popsány 2 hlavní významy fermentačního procesu při výrobě sýrů švýcarského typu. První je fermentace mléčného cukru starterem. Zpracovává se během výroby produkcí sýřeniny. Druhý spočívá v katabolismu laktátu Propionobacterium ssp. během dozrávání ve sklepě. There are two main importance fermentation process in production swiss-type cheese.The first one - fermentation lactose by starter - proceeds during production of cheese curd, the second one - catabolism of lactate by Propionobacterium ssp during cellar.
