Proteomickou analýzou extraktu sladu byly identifikovány bílkoviny nespecifický lipid-transfer protein 1, nespecifický lipid-transfer protein 2 a protein Z (major endosperm albumin) a studovány jejich posttranslační modifikace. Identification and investigation of posttranslational changes of nonspecific lipid transfer protein 1, nonspecific lipid transfer protein 2 and protein Z (major endosperm albumin) from barley malt by the proteomic strategy were performed.
