Majonézy jsou viskoplastické emulze typu olej ve vodě. Rheologické vlastnosti mají značný význam na jejich funkční vlastnosti a senzorickou jakost. Mezi zdánlivou viskozitou a mezí toku byla zjištěna nelineární funkční závislost. Korelací hodnot meze toku a obsahem tuku (66-82%) byly zjištěny těsné a průkazné funkční závislosti. Mayonnaises are viscoplastic oil-in-water emulsions, in which rheological properties have important influences on functional properties and the sensory quality. Nonlinear relations were observed between the yield value and the apparent viscosity. The yield value were related significantly with their fat content (66-82%).
