Cílem práce je obecně popsat českou gastronomii, její zaměření, historický vývoj a místo v národní kultuře, zmapovat zakotvení gastronomie v oficiálních dokumentech o zachování kulturního dědictví a charakterizovat tradiční gastronomii jako součást lokální a regionální kultury ve vybraných lokalitách a regionech. Praktická část práce je pak věnována analýze vlivu tradiční gastronomie na současnou ekonomiku, konkrétně na producenty tradičních gastronomických výrobků ve vybraných lokalitách a regionech se specifickou kuchyní. The aim of the thesis is to generally describe Czech gastronomy, its orientation, historical development and position in national culture, to specify the position of gastronomy in official documents about the preservation of cultural heritage and define traditional gastronomy as part of local and regional culture in selected localities and regions. The practical part of the thesis is devoted to the analysis of the impact of traditional gastronomy on current economy - in particular, there are examples of producers of traditional gastronomic products in selected localities and regions of unique cuisine.
