Keywords: antioxidant activity. In aqueous extracts content of caffeine was determined by the HPLC method. For the evaluation of UV protective efficiency SPF and critical wavelenght was calculated based on absorption spectrum.; differs in species; ethanol and lipid extracts were prepared from roasted and green coffee. Extracts were spectrophotometrically characterized for the content of phenolic compouds; flavonoids; methods of oil isolation were descibed. In the experimental part aqueous; origin; processing method and intensity of roasting. Theoretical part of this thesis describes technology of coffee production; The bachelor thesis is focused on isolation and characterization of coffee oil.
