The efficient approaches for enzymatic digestion of plant proteins

In this work the fast and efficient methods applying ultrasound and infrared radiation were employed for in-gel digestion of proteins extracted from Hordeum vulgare. These techniques can be used instead of time consuming conventional protocol prior mass spectrometry analysis. The comparative study indicates that the examined protocols are able to enhance digestion efficiency and protein identification.
Monitoring of quantitative and qualitative barley proteome changes within different varieties and malting process

Various European barley cultivars recommended as the varieties suitable for the production of the Czech beer were analyzed in this work. Relative quantification of chosen protein and their comparison was evaluated using the combination of isotopic peptides labeling (iTRAQ) and mass spectrometry. Barley grain proteins were separated by HPLC on the SEC-3 column and chosen identified protein fractions were subsequently used for iTRAQ labeling.
Changes of protein profile during the brewing process

Our work was focused on the protein identification in individual stages of brewing process. The greatest attention was paid to the proteins that resist the harsh conditions applied during brewing and therefore may influence various beer properties. These proteins (nsLTPs, protein Z and group of protease/alpha-amylase inhibitors) belong to the group of PRs.
A method for determining the effect of osmotic stress on the physiological state of brewer´s yeast and the course of main fermentation

The methodology concerns a laboratory assay of the response of production strains of brewer´s yeast to high osmotic pressure common for the HGB (high gravity brewing) process. It is intended for brewery laboratories with good instrumental background, which are engaged in characterizing producrion strains and evaluating their suitability for use in new technologies. Application of the methodology extends the spectrum of methods used for the description of production yeast strains

Identification and investigation of posttranslational changes of nonspecific lipid transfer protein 1, nonspecific lipid transfer protein 2 and protein Z (major endosperm albumin) from barley malt by the proteomic strategy were performed.
