Consumer satisfaction with microbrewery product
OPOLZER, Pavel
The subject of the diploma thesis was to characterize consumers and their satisfaction with the products of the brewing industry, focusing on microbreweries. At the beginning of the thesis the situation on the local market is described and the literary research explains terms such as consumer, satisfaction, measurement of satisfaction and also the brewing industry with a focus on microbreweries. In the practical part of research was realized by the method of questionnaire survey and in the second part by blind tasting. The main objective was to find out consumers' view of the brewing industry and microbreweries. In recent years, the trend of small and domestic breweries has increased in the Czech republic and their numbers are growing by dozens each year. It differs a lot from large industrial breweries, because the smaller amount of production makes possible to produce special types of beer. This is tempting at microbreweries, specialty beers and their possible flavors, other beer brewing technologies and a homely approach.

The bachelor's thesis is based on an architectural study of the subject Atelier's work AG032 and a design study of the subject of the Comprehensive Project AG036. The award contained several requests from the investor. The subject of this bachelor thesis is the design of a new-build winery in the village of Novosedly. Sorted parcels with parcel numbers 5844/2, 5764/29, 5764/55 and 5764/3 on which the building project is located and is located in the cadastral territory of the municipality of Novosedly. The main access to the property is from the main road 414 and further along the asphalt road, which also serves as a cycleway. The building is situated near the property boundary, i.e. its northwest side. From the very situation emerges the basic concept of the project, which is to try to build a new domination of the village, while respecting the surroundings of the vineyards. One of the goals is to combine production, tasting and accommodation into one complex whole. The final design was influenced by the view of long-distance views from the area to the surrounding area (on Pálava) and another equally important one, by the creation of a resting place and meeting of people who go specifically for wine tasting or a selfless view of the surrounding area. The proposed building is two-storey, partially sunk in the terrain, when I took advantage of a large high jump in the terrain. On the first floor there is wine production and storage for subsequent export or preservation of wine. On the second above-ground floor there are areas for visitors, namely tasting and accommodation. A characteristic feature of the building is the saddle roof, which floats on the Old Mountain, thanks to considerable glass and lightening by means of columns. An important point of the proposal is the creation of a closed but open space (courts).

The theme of the bachelor's thesis was to design a new building project of the Marcinčák winery. The project was based on an architectural study which was made within the subject AG032 – Studio of Architectural Creation II and the main subject of the project was a new building construction in Novosedly, Moravia, region Břeclav. The land intended for this project is in the middle of the vineyard tracks in the area called Stará hora, near to the educational trail, where is currently the viewing area of Novosedly. The demands of Mr. Ing. Marcinčák for the construction included a space for processing the wine from the surrounding vineyards, its sale and a space for social purposes and accommodation. The construction is therefore a single unit divided into two floors. The main entrance is on the first floor, where is the access to the accommodation part with ten double rooms and one double room accessible for people with disability. In the other part of the building there is a social hall with sanitary facilities, catering kitchen and a tasting cellar. The entrance to the basement, where the wine factory is situated, was made to keep visitors in enjoyable and quiet resort and not bothered. The whole building is design in the shape U, which creates internal private space. At the same time the building shape protects the wine from the winds. In the middle of the building there is an observation accessible to the public, which maintains the view for the village and attracts more visitors or tourists on the natural trail.

The bachelor's thesis follows up and further elaborates the architectural study prepared within the subject Studio Creation 2 - AG032 - Production Buildings. The main topic of the work is the new construction of a building for the production of sparkling wines. The building is located in the cadastral area of Kobylí in Moravia. The building is not typical in the surrounding buildings, but still respects the surrounding buildings. The street part of the building is bent with a street line, the height of the building does not exceed the surrounding buildings, but tries to fit into the sloping terrain on which the building stands. The building has two floors. The floor marked as 1S, occupies a purely production function and there is a complete line for wine production from pressing to bottling. This line is loosely connected to the sparkling wine production line. There are also archive and expedition warehouses on this floor. This floor is part of the whole street sunk into the terrain, as the land continues to slope downwards, the building gradually grows out of the terrain. Structurally, the 1S is designed as a so-called reinforced concrete white tub. It fulfills both the HI function of the substructure and the aesthetic function, which is described as visible concrete from the exterior and interior of the building. The 1st floor of the building is entered from the street part and this floor has several functions. In the front part there is all the administration of the building together with the wine and sparkling wine shop, through the so-called connecting block we get to the living area, where there are a total of 6 rooms for guests who can stay here. One of the rooms is designed as barrier-free. The construction system of the 1st floor is made of YTONG blocks. To achieve thermal comfort in the interior, this floor is insulated with mineral wool and a ventilated wooden facade made of Siberian larch is subsequently designed for the composition of the insulatio

The subject of the bachelor's thesis for the academic year 2020/21 was the design of a representative and production space for winemaker Petr Marcinčák, the owner of the Marcinčák winery, whose current object does not correspond to the required representation. The newly created building is located on the outskirts of the village Novosedly, on an elevated hill Stara hora. This plot offers a unique view of the Palava wine region and the nearby wine town of Mikulov, which is dominated by the local castle. The land is situated uphill. Its terrain is sloping using the so-called terraces, where the individual terraces are spaced up to four meters in height. With the help of these height spacings, I could afford to design a partially recessed building. The representation part and the production part are located separately so that the production does not disturb possible guests of the winery. The production hall is designed in the lower part of the plot. Structurally, it is a skeletal system with a vegetation roof. The representative building is designed as a system of three blocks folded into a triangle with the height difference of the individual blocks. The space was created between the blocks and is used for communication. The first floor, also the entrance, serves as a reception for newly accommodated guests, a tasting room and accommodation. The second floor is used for catering and wine representation. The first underground floor serves as an accommodation. The whole building is designed from monolithic reinforced concrete. The main part of the tasting and catering is solved by reinforced concrete frames due to the large span. The roofs are used as terraces or vegetation roofs, with the exception of the roofing of the last above-ground floor, where it is a classic single-skin roof. The facade of the building is designed individually depending on the height of the floor. Stone cladding is chosen for the underground floor. The first floor is

The bachelor's final project is based on atelier project of the third semester of the bachelor's study program. The object is distinctly different from the original. The task was to design a winery with recreational capacity and social facilities. The plot is located on Stará hora in the regulation plan of the Novosedly village. The surrounding areas of the construction site are vineyards and other agricultural lands. there is a considerable view of the surrounding countryside, including the Pálava protected landscape area. The solved plots are gradually sloping towards the southwest. the investor demands designing of a production wine hall with at least six tanks and storage facilities. furthermore, the assignment to create 10 double accommodation units, a social room for private events and a public representation part. The building compactly combines three functions together to minimize heat loss, but at the same time it uses three different access areas: public, private and industrial. The construction respects the surrounding terrain in its shape and retains rainwater on green roofs or in the storage tank. The material solution of the exterior is based on trapeze sheet ventilated facade of white color and a reflective glass surface. the interior is industrially designed. concrete and ceramic surfaces are aesthetically visible. Technical distributions are run on the surface of structures. Generally It is dominated by concrete, ceramic surfaces and stainless or galvanized steel elements.
