The content of allergenic aromatic compounds in chosen food types
Fidrichová, Ivana ; Dvořák, Miloš (referee) ; Vítová, Eva (advisor)
This thesis describes properties, origin, usage and methods of obtaining fragrances of vegetable origin, which are common part of food products. Although the aroma substances are not classified as the main group of allergens, in many cases there is a warning of their allergic potential. 26 crucial fragrance allergens and related restrictions are set by the European Cosmetic Regulations. There is no coincident regulation for food processing industry so far. The practical part dealt with identification of potential allergenic fragrances in randomly selected food products.

This bachelor thesis is focused on the problematics of origin and occurrence of polycyclic aromatic hydrocarbons in food. The objectives of my thesis were to sumarise and compare isolating procedures for extraction of polycyclic aromatic hydrocarbons from food matrix and discusse analytical methods applied to determination of content of polycyclic aromatic hydrocarbons in food.
Assessment of chosen aroma compounds in foods and cosmetics
Obrdlíková, Blanka ; Hrstka, Miroslav (referee) ; Vítová, Eva (advisor)
This diploma thesis is focused on the problematic of assessment of allergenic aroma compounds in various matrices. In the frame of European legislation 26 of potentially allergenic compounds are stated, whose content in cosmetic products is limited. In the case of foods there is not such restriction so far. In the experimental part, the allergenic aroma compounds in chosen samples of cosmetic and food samples were identified and quantified using Solid phase microextraction in conjunction with gas chromatography. Sensory evaluation of aroma or taste is also included.

Non-fish prey in the diet of fish-eating mammals, Eurasian otter (Lutra lutra) and mink (Neovison vison)
Tuzarová, Veronika ; Čech, Martin (advisor) ; Poledníková, Kateřina (referee)
The Eurasian otter (Lutra lutra) is considered, along with the American mink (Neovison vison), a significant fish predator not only in the Czech Republic but also in other regions across Europe. One of the goals of this study is to determine, based on available literature, the types of prey that form the diet of the Eurasian otter and the American mink, specifically focusing on the non-fish component of their food and how the percentage representation of these items changes in the diet of both species depending on habitat and season. Another objective is to verify whether the American mink has a higher proportion of non-fish prey in its diet compared to the Eurasian otter. The processed data describing the diet through spraint analysis in biomass units were divided according to climatic regions, i.e., temperate, Mediterranean, and also based on the type of aquatic environment, i.e., stagnant or flowing water. The results of the study indicate that the American mink consumed, on average, three times more non-fish prey (74 % biomass) throughout the year than the Eurasian otter (24 % biomass). The seasonal variation had the most notable impact on the consumption rate of frogs and birds in the non-fish diet of both predators. According to the analyzed data, both predators especially focused on frogs,...
Faktory ovlivňující kumulaci ftalátů v potravinách
Němečková, Tereza
The bachelor thesis Factors influencing phthalate accumulation in food has the character of a literature search and deals with factors that influence phthalate migration into food. Phthalates are lipophilic organic compounds that are used to soften plastics. As a result of human activities, they enter the environment, from which they subsequently enter the human food chain. However, food contamination also occurs during production and storage. Factors that influence the migration of phthalates into food include the contact time of the food with the polymer, storage temperature, ultrasound, pH of the food, UV radiation, type of preservative, and composition of the packaging material and food. Phthalates have negative effects on human and animal health. They cause reproductive disorders, allergic reactions, immune system disorders, cardiovascular problems and are carcinogenic.
Antimikrobiální rezistence a její šíření v potravinovém řetězci
Maršová, Nikol
The bachelor thesis deals with the resistance of microorganisms to antimicrobial agents and its subsequent spread in the food chain. It focuses mainly on the resistance of microorganisms to antibiotics, in relation to the types of antibiotics according to their chemical structure and their mechanism of action. It describes the basic principles of agents used against viruses, yeasts, fungi and parasites. Characterises the nature of the emergence and mechanisms of resistance. It also discusses the methods used to determine the resistance of microorganisms to antimicrobial agents. Describes when resistance of microorganisms began to emerge historically and its occurrence in different sections of the food chain. In relation to the spread of antimicrobial resistance in the food chain, it describes the most serious zoonotic agents today.
