Sustainability of public catering - Possibilities of implementation of organic products into the public catering

The bachelor's thesis deals with sustainability in communal catering and the possibilities of implementing organic food into public catering. The theoretical part of the work is focused on the development and structure of communal catering in the Czech Republic. He also deals with purpose-built catering, specifically competitive catering, school catering and current legislation related to it. The next chapter deals with the certification and control of organic products and organic food. The concept of organic farming is briefly explained, which is closely related to the concepts mentioned above. Furthermore, the regionality of food production in the given territory is discussed here, and towards the end of the theoretical part, the application of bioproduction in public catering and its perceived benefits, as well as obstacles, are mentioned. An organization ensuring the operation of selected corporate, school and public canteens was selected for the empirical part of the work. As part of the work, the main barriers to the introduction of regional foods and organic foods into this facility were evaluated and the possibilities of their application were assessed in connection with the availability of food raw materials from local suppliers. Furthermore, the consumption and costs of the main food raw materials during the year and the costs of replaceable equivalents in organic quality were calculated. At the end, the difference in costs against the current state was calculated and the result was then evaluated.

Kahúnová, A. Social responsibility in the field of public catering. Diploma thesis. Brno: Mendel University in Brno, 2023. The diploma thesis deals with the design of sustainable recommendations for school catering facilities with a focus on short supply chains. Thanks to the processing of quantitative research, data was obtained to evaluate the involvement of short supply chains in the operation of school canteens and also the benefit of shopping from local suppliers. Data were also obtained and evaluated in the field of education about food waste and the effects of participation in projects helping to improve the operation of school canteens in the Czech Republic. These data were supplemented with statements from school canteen managers, who had the opportunity to add their experience in the field and express their opinion on the current state of the school canteen system. Recommendations were properly described and economically calculated if possible.
Fish and fish products in the sector public catering

The bachelor thesis is focused on fishes and fish products in the catering sector. The content of the theoretical section is general information about fishes and their subsequent processing into the fish products. The practical part is focused on the public catering sector in the Czech Republic, where the inclusion of fishes in the menus of restaurants and canteens, with an orientation on fish species, method of preparation, average portion weight, price and nutritional value of fishes offered in the public catering sector.
Sustainable restaurants in Czech context - criteria, barriers and opportunities

This study deals with the topic of restaurant sustainability in Czech context. The aim of the research was to set criteria for a Czech sustainable restaurant and also to reveal main barriers and opportunities for sustainable operation of a restaurant. The sustainable restaurant criteria were based on an analysis and comparison of four foreign methods of sustainability assessment in the sector of food services (FOODSCALE, Sustainable Restaurant Association, Green Restaurant Association and the Green Seal's GS-55 Standard), one Czech concept of restaurant sustainability, an analysis of good practices in fifteen foreign "sustainable restaurants" and an analysis of interviews with four Czech experts in the field of sustainable development and gastronomy. Based on this data the final Sustainable Restaurant Criteria were established, comprised of 102 criteria, classified into 5 main categories and 26 subcategories. The criteria were then described in detail, in view of the Czech context. The barriers and opportunities for the operation of Czech sustainable restaurant, defined by the above mentioned criteria, were identified from interviews realised with eight restaurateurs, who are already meeting some of the criteria, and therefore are one of the most progressive in Czech Republic in this field. Možnosti veřejného stravování v biokvalitě v regionu Brno-město

The thesis is focused on the option catering in bioquality in the region Brno-city. In the first part of thesis are defined the basic concepts of organic farming, organic foods and their certification, market and consumption of organic food and other terms of organic farming. It is followed by information about the market and the consumption organic food. In the second part of thesis are identified options of catering in bioquality in the Czech republic, which are identified from publicly available portals. Another chapter is devoted to the rules and obligations in the catering in bioquality. The thesis is focused on the region Brno-city, it was chooses organic restaurant Rebio. At the conclusion of the thesis was done a questionnaire survey by the customers of organic restaurant Rebio, the survey is about knowledge of organic food, the consumption of organic food, and how often people going to the Rebio restaurant.
Stravování v biokvalitě v regionu Brno-město - problematika dodávky surovin

The diploma thesis deals with public bio-quality eating in the Brno-City region and with the issue of raw materials supply. In the first part of the thesis the organic agriculture is defined, in comparison with conventional and integrated agriculture. Also the definition of terms like organic products, organic food and other organic products, including their certification. The next part deals with the market, as well as with the consumption of organic food with an overview of organic food suppliers and the definition of public eating facilities. The last issue of this section is the purchasing behaviour that greatly affects this industry. The second part of the thesis is related to the restaurant Rebio, which is the only certified restaurant in this region. The survey is divided into three parts. In particular it is a supplier survey, than an interview with a chef about the supplier-customer environment of the restaurant, and at last but not at least, a questionnaire survey at the their customers, which related to restaurant turnout, organic farming and purchasing behavior.

Prosazování místní potravinářské produkce ve školím stravování

In the theoretical part of the describing local production, the direct and indirect distribution channels, trends in school eating, history, legislation, organic food processing, its labelling, obtain certificates, and the advantages and disadvantages of each sale. The practical part of the thesis is focused on the evaluation of the results of the completed survey in selected school catering facilities in the South Bohemia region. In the framework of the questionnaire investigation was evaluated food consumption, food processing procedures (fresh, frozen, semi-finished products), the proportion of seasonal and unseasonal of food and the share of meat. The analysis is part of the UMBESA project, which seeks to promote and enhance regional, organic, seasonal and fresh food in the catering facilities.
Spokojenost studentů s úrovní veřejného stravování v Brně

In this thesis I have dealt with student satisfaction with the level of public catering in Brno. In the first part are described mainly theoretical methods for marketing research and subsequently basic statistical methods for data processing. In the second part of my work I analysed the data from the survey and interpret the results. Then I divorced debate in which I based on the obtained results sug-gested possible solutions for catering students. In conclusion, I evaluated the results of the whole thesis and indicate whether objectives have been achieved.
The Quality of School Meals at the Elementary School and the Nursery School and in the School Canteen in the Children´s Home in Budkov

Eating outside the home is of great social significance, and its importance is increasing not only in the developed countries, but also in the Czech Republic, where most people have at least one daily meal outside their homes. This is the reason my bachelor?s thesis is dedicated to the quality of catering in two organizations. One of them is Dětský domov Budkov (Children?s Home in Budkov), and the other is Základní škola Budkov (Primary School in Budkov). The theoretical part of my bachelor?s thesis deals with general knowledge of HACCP and the consumer basket. This also includes the diversity of menus and the composition of daily menus. I concentrated on the consumption of salt in both institutions. I also remembered to observe the quality and form of catering, its organization and the spatial layout. In my practical, part I compare the two children canteens in Budkov. In chapter ?Results? I describe individual parts of the catering properties a complex of storage spaces, the canteen, and the kitchen itself. I especially concentrated on the inspection and observance of the critical points of HACCP (Hazard Analysis and Critical Control Points), I went through the diagrams of manufacturing processes, and the cooks lent me the protocols with the measured temperatures of the critical points. When filling the food basket, considerable attention was paid to the percentage observance of the ten basic ingredients. I asked the caterers if they could measure the daily consumption of salt, and the values consequently helped me to obtain the final result. The pupils of the primary school and the inhabitants of the children?s home in Budkov provided me with subjective evaluation of the prepared meals. I could also take some picture materials. The aim of this thesis is to compare the preparation of meals for children in both canteens and evaluate the results.
