V teoretické části tato bakalářská práce představuje historický vývoj stravovacích služeb a definuje důležité pojmy související se zadaným tématem. V praktické části představuje odvětví cestovní ruch a dále se zabývá rozborem statistických údajů, z nějž vyvozuje příčiny současného stavu poptávky po stravovacích službách, historickými příčinami, analýzou dotazníkového šetření, z něhož vyplývá současný stav poptávky po stravovacích službách, a nakonec hodnocením jednotlivých zařízení na Vysočině. This bachelor's work in theoretical part presents historical development of food services and defines important terms related to assigned issue. In practical part presents tourism and deals with analysis of statistical data and deduces causes of actual demand for food services, historical causes, analysis of questionnaire, which leads to actual state of demand for food services and in the end it deals with assessment of restaurants separately.
