Předložená bakalářská práce se zabývá studiem biologicky aktivních látek v cereálních produktech. V teoretické části byl zpracován přehled aktivních látek se zvláštním zaměřením na fenolické látky. V praktické části byly u 15 druhů cereálních výrobků stanoveny skupinové parametry - celkové polyfenoly, celkové flavonoidy a celková antioxidační aktivita. Metodou HPLC/UV-VIS byly stanoveny některé individuální flavonoidy. Nejvyšší obsah polyfenolických látek byl naměřen u cereálií obsahujících ovoce (maliny, borůvky, tropické a červené ovoce), kakao, lískové oříšky, slunečnicové semínka a u pohanky. Ve všech cereálních produktech byla detekována přítomnost katechinu, epikatechinu, katechin-gallátu, epikatechin-gallátu, kyseliny chlorogenové a kyseliny ferulové. Součástí práce byla i senzorická analýza a spotřebitelský dotazník. Presented bachelor thesis is focused on study of biologically active substances in cereal products. In theoretical part over view of cereal active substances, predominantly phenolic compounds were introduced. In practical part 15 kinds of cereal products were analyzed. In these materials some group parameters - total phenolics, total flavonoids and total antioxidant activity were measured by spectrophotometry. RP-HPLC/UV-VIS method was performed for analysis of selected individual flavonids. The highest content of phenolic compounds was measured in cereals containing fruits (raspberries, blueberries, tropical and red fruit), cacao, crusty fruits (hazel nuts, sunflower seeds) and buckwheat. All cereal products contain catechine, epicatechine, catechin gallate, epicatechin gallate, chlorogenic and ferulic acid. As a part of bachelor thesis simple sensory analysis was performed and consumer questionnaires were evaluated.
