Cílem mé diplomové práce proto bylo zjišťování výskytu biogenních aminů (BA) a polyaminů (PA) ve vybraných druzích zrajících sýrů a sledování obsahu biogenních aminů a polyaminů v den minimální trvanlivosti a týden po uplynutí této doby. The aim of this thesis was to determine the content of biogenic amines (BA)and polyamines (PA)in selected types of cheese and the influence of storage time on the content of biogenic amines.
