Tato práce se zabývá charakteristikou a následným porovnáním nutriční hodnoty plodů tří odrůd muďoulu trojlaločného, málo známého ovoce pocházejícího z východních států USA. Analyzované odrůdy jsou PA Golden, NC-1 a Rebecca’s gold. Charakteristika byla provedena na základě stanovení lipidů izolovaných Soxhletovou extrakcí, stanovení bílkovin Kjeldahlovou metodou, stanovení prvků pomocí ICP-OES, stanovení sacharidů a vitamínu C využitím HPLC, stanovení organických kyselin pomocí IC a naposledy spektrofotometrickém stanovení celkových fenolických látek. Na základě této pilotní studie lze konstatovat, že muďoul trojlaločný je zajímavým ovocem z hlediska obsahu nutričně významných látek a do budoucna by měl výzkum pěstování tohoto ovoce na jižní Moravě pokračovat. This thesis describes pawpaw, fruit from east states of USA. Main part of this work is focused on nutritional characteristic of three species and their comparation. The analyzed species are PA Golden, NC-1 and Rebecca’s gold. Characteristic contains determination of lipids isolated by Soxhlet extraction, determination of proteins by Kjeldahl method, elemental analysis using ICP-OES, determination of saccharides and vitamin C by HPLC, determination of organic acids using IC and spectrofotometric analysis of phenolic compounds. This study shows, that pawpaw is interesting fruit, rich in nutritionally important compounds. That‘s why the cultivation and research of this fruit in South Moravia should continue in the future.
