Táto diplomová práca sa zaoberá elementárnou analýzou syrov s bielou plesňou na povrchu. V teoretickej časti je popísaná obecná charakteristika syra, klasifikácia syrov, ich nutričné aspekty a charakteristika syrov s bielou plesňou na povrchu. Veľká časť je venovaná popisu minerálnych látok vybraných k analýze. Na konci teoretickej časti boli popísané Kjeldahlova metóda a optická emisná spektrometria s indukčne viazanou plazmou (ICP-OES). Experimentálna časť sa zaoberá prípravou vzoriek, postupom analýzy a následne spracovaním nameraných výsledkov. K analýze boli použité vzorky jedenástich syrov. Tieto vzorky pochádzali z Česka, Francúzska a Slovenska. Na stanovenie obsahu proteínov sa využila Kjeldahlova metóda a ICP-OES bola využitá k prvkovej analýze. Výsledky boli porovnané navzájom a tiež s výsledkami iných štúdií. Následne boli v záverečnej časti štatisticky spracované a vyhodnotené. This Master's thesis deals with elementary analysis of cheeses with white mold on the surface. Theoretical part describes general characteristics of cheese, classification of cheeses, their nutritional aspects and characteristics of cheeses with white mold on the surface. Large part is focused on description of mineral substances selected for analysis. At the end of the theoretical part, the Kjeldahl method and emission spectrometry with inductively coupled plasma (ICP-OES) were described. Experimental part deals with preparation of samples, approach of analysis and processing of measured results. Eleven samples of cheeses were used for analysis. These samples were from Czech Republic, France and Slovak Republic. Kjeldahl method was used to determine protein contents and ICP-OES was used for elemental analysis. The results were compared to each other and also with results from other studies. Subsequently, they were statistically processed and evaluated in the final part.
