Metodika je určena pro laboratorní stanovení odpovědi provozních kmenů pivovarských kvasinek na osmotický stres při používání technologie HGB (high gravity brewing). Metodika je určena pro pivovarské laboratoře s dobrým instrumentálním zázemím, jejichž náplní je charakterizace provozních kmenů pivovarských kvasinek a posouzení jejich použitelnosti pro nové technologie. Aplikace metodiky rozšíří spektrum metod používaných k popisu produkčních kmenů kvasinek The methodology concerns a laboratory assay of the response of production strains of brewer´s yeast to high osmotic pressure common for the HGB (high gravity brewing) process. It is intended for brewery laboratories with good instrumental background, which are engaged in characterizing producrion strains and evaluating their suitability for use in new technologies. Application of the methodology extends the spectrum of methods used for the description of production yeast strains
