Cílem této práce bylo sledovat výskyt biogenních aminů a polyaminů ve vybraných typech zrajících sýrů a zhodnocení jejich obsahů od uplynutí doby spotřeby. Obsah biogenních aminů a polyaminů ve vybraných vzorcích byl sledován poslední den data spotřeby, týden po uplynutí doby spotřeby, dva týdny po uplynutí doby spotřeby a po čtyřech týdnech od uplynutí doby spotřeby. The aim of this thesis was to observe the occurrence of biogenic amines and polyamines in selected types of ripening cheeses and to assess the content of the materials since the expiration date. Content of biogenic amines and polyamines in chosen samples was monitored last day of the expiration date, a week after the expiration date, two weeks after the expiration date, and after four weeks from the end of the expiration date.
