Metodika zahrnuje optimalizované metodické přístupy pro analýzu podjednotek gluteninů s vysokou molekulovou hmotností (HMW-GS) a podjednotek gluteninů s nízkou molekulovou hmotností (LMW-GS) u pšenice. Klasická elektroforéza v polyakrylamidovém gelu umožňuje současnou klasifikaci obou gluteninových systémů. Automatická čipová elektroforéza je nová moderní technika, která zaručuje podmínky objektivní, rychlé, dostatečně přesné a reprodukovatelné, z hlediska požadavků na bezpečnost práce a bezpečné analýzy gluteninů. Součástí metodiky je hodnocení gluteninových podjednotek z hlediska predikce pekařské jakosti pšenice. The methodology includes optimized methodological approaches for the analysis of high molecular weight glutenin subunits (HMW-GS) and low molecular weight glutenin subunits (LMW-GS) in wheat. The classical polyacrylamide gel electrophoresis enables a simultaneous classification for the both glutenin systems. The automatic chip electrophoresis is a new modern technology ensuring conditions for objective, rapid, sufficiently precise, reproducible and safe (regarding workplace safety requirements) glutenin analysis. A part of the methodology is an evaluation of glutenin subunits in terms of the wheat baking quality prediction.
