Práce se zabývá fenoménem olomouckého tvarůžku, původním českým sýrem od konce 19. století do roku 1938. Přibližuje proměny v technologii výroby, sleduje výrobu tvarůžků jako předmět podnikání a jako samostatné odvětví mléčné výroby. Nastiňuje také jeho místo v konzumních zvycích. The thesis deals with phenomenon of "Olomoucké tvarůžky" (Olomouc cottage cheese), an original Czech cheese in period from an end of 19th century to 1938. It puts closer look at the changes in ways of production, observes production of "Olomoucké tvarůžky" as a subject of enterprise and as an individual branch of dairy industry. It also outlines place of "Olomoucké tvarůžky" in consumption habits.
