Motivace českých a slovenských studentů k vegetariánské stravě

The thesis deals with the motivation of Czech and Slovak students aged 19-28 years to vegetarian diet. The research also includes students of other nationalities - Ukrainian and Romanian. The aim is to reveal what is the most common motivation for vegetarianism among students. This thesis also looks at the interpersonal relationships of vegetarians and the effects of vegetarianism on relationships. Lifestyle of vegetarians is another component investigated. The thesis is divided into a theoretical part and an analytical part. In preparing the theoretical part, relevant sources and a systematic literature search were used to develop the theoretical framework. The analytical part contains the results of the own research as well as the results of the systematic literature search. In conducting the research, a questionnaire survey was conducted as a pre-survey to obtain suitable informants for the next stage of the research, i.e. semi-structured interviews. Students who voluntarily agreed to participate in the interview left their contact details in the questionnaire. They were then included in the research sample on a random sampling basis. A total of 247 respondents participated in the questionnaire survey, of which 40 were vegetarians and 16 students participated in the interviews. Descriptive statistics, specifically frequency analysis, was used to analyse the results from the questionnaire survey. The interviews were analysed using thematic analysis. Through the results of the systematic literature search, 37 scientific articles were obtained in the time span of 2017-2022, with a total of 10 scientific articles relevant to the topic. The results from the interviews confirm that the most common motivation among students for vegetarianism is mainly ethical motivation. Then environmental and health motivations. It was also found that multiple motivations play a role in encouraging students to start vegetarianism or to maintain this lifestyle. Elimination of certain types of meat occurs earlier in some students before starting a vegetarian diet. The lifestyle of vegetarians is positive, as students try to do sports or get enough exercise regularly. They also take care of good psycho-hygiene and, because of their diet, take vitamins and supplements, which they consider very important as they are aware of the risks of their diet on their health. The interpersonal relationships of vegetarians are affected in both negative and positive ways especially with family, friends and partners. The most affected are in partner relationships. Most of the influence in partner relationships is in the area of eating patterns and choice of partner.

This thesis deals with unconventional ways of alimentation. The primary aim of the thesis is to define the individual unconventional directions of alimentation and to collect and organize available information. The origin and principles of the macrobiotic, raw food, vegetarian and organic diet is described. It deals with the philosophy, goals, motivations and composition of the diet. It maps the pluses and minuses of the alternative ways of diet including the most common reasons leading to such dietary decisions. The risks and advantages of individual types of diet are given with respect to its influence on the human health. Vegetarian diet in pregnancy

Introduction: The topic I chose for my bachelor thesis is called vegetarian diet during pregnancy. My effort is to specify the vegetarian way of eating more specifically and also to bring closer to the eating habits of pregnant women who eat a meat-free vegetarian diet. Objectives: The objective of the theoretical part of the thesis is to provide the reader with a depper understanding of the alternative nutritional direction of vegetarianism, specific distribution, history, benefits and also the risks associated with it. The final part of the theoretical work is devoted to the nutrition of a pregnant vegetarian woman. The main goal of the research investigation of the bachelor 's thesis was to find out whether a vegetarian diet is suitable during pregnancy, what are the eating habits of pregnant vegetarian women and how the pregnancy of the women I approached in my research progressed. Another goal was to find out whether the interviewed women continue to educate themselves during pregnancy and draw information from relevant sources, whether they consulted their lifestyle with their doctors, and finally to find out what type of diet they plan for their offspring in the future, whether they will eat a vegetarian diet, or they will have freedom of choice in choosing what they want to consume....
Legumes and their importance in nutrition

The master's thesis deals with the characteristics of legumes, their consumption in my country and in the world, different options of preparation and mostly their composition and influence on health. Legumes are an important source of plant based protein, complex carbohydrates, fiber, vitamins, minerals and other components, that might be regarded as less desirable due to possible interactions with food nutrients and gastrointestinal issues. The amount of some of these substances could be reduced by following treatment and on the other hand even these antinutrients can be benefitial. Last but not least legumes are grtting more important in conection with the environment and other alternative diets such as vegetarianism and veganism, where legumes are important as a protein source instead of animal based sources. The practical part consists of a survey with the aim to determine knowledge about legumes, preference and frequency of their consumption and with linking characteristics of students of medical faculties as a part of the population, that is preparing for work conected with human health. nutrient supply in vegetarians

The bachelor's thesis deals with the supply of nutrients in ovo-lacto vegetarians. The goal of the work is to find out whether the supporters of this form of vegetarian diet are sufficiently supplied with macronutrients and selected micronutrients, the main area I am targeting in the research part of the work. The theoretical part is first focused on vegetarianism as an alternative way of eating, its definition, history in the world and in the Czech Republic, reasons for adopting vegetarian forms of eating and analysis of individual forms of vegetarian diet. The second section of the theoretical part looks at the advantages and disadvantages of the ovo-lacto vegetarian diet and the analysis of individual nutrients. Mainly the nutrients that are part of the research are analyzed, the vast majority of which are those nutrients that can be contained in a vegetarian diet in lower concentrations than in a mixed diet. Twelve vegetarian men and women aged 20-41 were included in the research investigation of the practical part of the bachelor's thesis. First, the respondents' diet records in terms of intake of individual nutrients were evaluated in the Nutriservis application, and the resulting average concentration of nutrients in the diet was then compared with the recommended values for nutrient intake. In addition to a separate evaluation of the menus of individual respondents, specific macronutrients and micronutrients were subsequently analyzed, or more precisely, their average occurrence in the menus of all respondents. The results of the research point to deficiencies in the quality and, above all, the quantity of macronutrients and selected micronutrients in the respondents' diet.
Relevance of nutritional recommendations obtained electronically from different sources

This thesis focuses on nutritional recommendations as information provided by national and international institutions that they receive to individuals. It can be their activity in society and the creation of educational materials or the opportunity to address them directly about a specific problem. The theoretical part introduces the topic of general nutritional recommendations, which are designed primarily for the whole society or for a certain group of people (like children, seniors etc.). Finally, the exact topics that are not usually included in the general nutritional recommendations for the population are discussed. These are mainly health conditions where a specific direction of diet is necessary, and the diet has its given restrictions. The topics were selected based on their popularity and topicality in the population. The work analyzes topics such as salt intake in food, iron deficiency, eating disorders, possible nutrient deficiencies in the vegetarian diet, but also metabolic disorders such as phenylketonuria, milk protein allergy or lactose intolerance. Eating as an Aesthetic Experience, or even as an Art?

This bachelor's thesis is focused primarily on options, whether you can consider food as an aesthetic experience or even if it is possible to call it art. The main points in this thesis are a rough look at food and the act of eating as a whole, which could then be called a type of "fine art." Pragmatic aesthetics will be the most significant factor in confirming or disproving this statement, as practical aesthetics focuses on everyday and mundane parts of life (as one of the few aesthetic and philosophical branches) and points out the unusualness and eventual aesthetic values. The last part of the thesis focuses on various eating habits and their aesthetic and ethical elements, which can sometimes even fundamentally influence the aesthetic experience of eating. The items listed in this thesis are the main features of an aesthetic experience related to eating and situations when it is possible to call eating an art.
Stravovací návyky ve školní jídelně u žáků střední odborné školy

This bachelor thesis is focused on the eating habits of vocational high school students. The work consists of two parts, theoretical and practical. The aim of the theoretical part is to describe the diet of students in the school cafeteria and the specifics of adoles-cents’ diet, further to define terms such as consumer basket, veganism, vegetarianism, food allergies, food pyramid, etc. The methods used in the theoretical part are a review of scientific literature, creating notes, followed by their analysis and synthesis. In the practical part, the aim is to elicit the degree of satisfaction of students with the offer of food in the school cafeteria. We are also interested in aspects of the motivations of students to eat in the school cafeteria, whether they are satisfied with the choice of meals or what meals they would welcome, as well as what are the meal choices for stu-dents with special eating habits. A quantitative strategy and a questionnaire method were used. The questionnaire was designed for the purposes of our survey. The respond-ents are students of a selected high school in South Moravia. The results are presented in tables. The conclusion of the bachelor thesis contains the results, the literature used and appendices. Conclusions and draft recommendations for pedagogical practice are formu-lated.
Alternative nutrition - use and knowledge of PF JU students

The bachelor thesis deals with alternative nutrition and examines the knowledge and its use among students of the Faculty of Education of the University of South Bohemia. The theoretical part deals with basic information about alternative nutrition and discusses possible reasons leading to dietary change. It also describes in more detail the different alternative ways of eating. The most well-known dietary trends among students are vegetarianism and veganism, for which the pitfalls and possible deficiencies in the diet are discussed in detail. The practical part elaborates the students' knowledge and opinion on alternative diets, the relationship to healthy eating and the use of dietary supplements. In addition, it evaluates the representation of different alternative diets, the reasons leading to dietary changes, the perceived changes, or the ways for obtaining nutritional information. The results are based on a questionnaire survey with a total of 101 respondents. Of the total number of respondents, 10% of the students were vegetarian. Other alternative forms of nutrition are less represented. The Mediterranean diet fared best in terms of health benefits in the evaluation of alternative forms of nutrition. However, none of the students surveyed follow its recommendations.
