Nové možnosti a technologie ve výrobě piva

The bachelor thesis is focused on new ways of using raw materials in the brewing in-dustry and new innovations. The theoretical part mentions basic raw materials for beer production, special types of malt, solid adjuncts from other raw materials, especially pseudocereals, liquid adjuncts, various methods of processing hops and new proce-dures or new equipment in beer production. Also the principle of production of Czech beer and European beer is compared. In the second part, the possibility of using star-chy surrogates was investigated. A recipe was created using buckwheat and then the sensory profile of the beer was created. From the obtained results, it was found that the addition of buckwheat negatively affected the sensory properties of the beer, which was reflected in the negative evaluation of both aroma and taste.

Bachelor's thesis Possibilities of rye and other cereal grains use as brewing adjuncts focuses on minority cereals and their properties relevant for brewing industry, with special regard to rye (Secale cereale) and triticale (× Triticosecale). As available studies suggest, triticale seems to be a promising material to be used in larger quantities as a source of starch, or to complement nitrogen and enzyme poor adjuncts. Rye, on the other hand, is a rather troublesome grain and offers little advantages for an extensive use. Nevertheless, it can be a valuable material for specialty beer production, due to its capability to impart specific flavours. With regard to gluten-free beer production, further attention should be paid to rarely used millets, especilally teff (Eragrostis tef).

The theoretical part of the thesis is focused on manufacture of malt which contains income and cleaning of grain, steeping, germination and kilning. Different kinds of malts and their application in the manufacture of beer are described in the work. It also consists of surrogates used in the manufacture of beer. The thesis also deals with brew-ing, wort and beer production. There is a practical part aiming at the production of three variants of purple wheat malt and beer brewing made from wheat malts
